Do you need a meat thermometer when you’re cooking chicken?
I always like to use one, even when I’m following the cook time of the recipe. Make certain that you’re putting it into the thickest part of the chicken to get an accurate reading. The chicken should read at least 165 degrees to be considered cooked.

Do you season the skin on chicken thighs?
I do! I season it all! Even if I’m cooking boneless skinless chicken thighs, I add my seasoning and olive oil everywhere on the surface. I think it makes a big difference in the taste of the cooked chicken thighs, too.
Make certain that before you cook a baked chicken thighs recipe, you put the chicken on your baking sheet pan and pat it dry with paper towels. Remove some of the excess moisture before adding on your seasonings and salt and pepper.
You can do this for cooked chicken breasts as well.
