Buffalo Chicken Stuffed Peppers Recipe

The fun part about this stuffed peppers recipe is stuffing the peppers! The outside of the peppers cooks up perfectly to allow a bit of sweetness while staying firm enough to hold in all the goodness.

We’ve made this for game day, sleepovers, and even Sunday dinners – and we love it no matter when we cook it up.

My boys also love to help with this recipe to see how much they can stuff into one of the peppers. As long as they eat it, that’s all I’m worried about!

What other ingredients can I add to stuffed peppers?

Stuffed peppers are a classic dish that can be tailored to suit any taste. If you’re looking for an alternative to beef or rice, consider adding cheese, breadcrumbs, grated carrots, and diced onions for additional texture and flavor.

Alternatively, you could opt for a vegetarian version of this popular dish by simply omitting the meat and replacing it with lentils or meats of your choice.

These ingredients cook quickly, making them ideal additions to the recipe. In addition to being nutritious and filling, they will help give your stuffed peppers enough flavor so they can stand on their own without adding herbs or spices.

How do I store leftover stuffed peppers?

Storing leftover stuffed peppers is easy, but there are a few important guidelines to ensure you enjoy the best quality and food safety. Firstly, store the peppers in an airtight container and cool them as soon as possible after being cooked, preferably within two hours.

It is preferable not to freeze them, as this can cause a soggy texture. If storing for longer than 3-4 days, transfer them to a shallow container with a lid or wrap them tightly in plastic wrap before placing them in the refrigerator.

When reheating leftovers, ensure they reach an internal temperature of 165°F preceding consumption.

Following these steps will guarantee your leftovers taste as delicious and fresh as when served for the first time!

  • 3 Chicken Breasts (~1/2 lb)
  • Salt and Pepper, to taste
  • 1/3 cup Buffalo Wing Sauce
  • 3 cups of cooked Jasmine Rice
  • 4 ounces of softened Cream Cheese
  • 1/4 cup Blue Cheese Dressing
  • 1 cup Shredded Cheddar Cheese, plus more for topping
  • 4-5 Sweet Bell Peppers

Put the chicken in the saucepan and season with salt and pepper. Pour the buffalo wing sauce on top.

Mix the cream cheese, blue cheese dressing, and buffalo sauce in a bowl. Stir in the rice. Set aside.

Shred the cooked chicken and add it to the rice mixture. Add the cheese and stir.

Core each bell pepper with a paring knife, and take out the seeds and membrane.

Fill the prepared papers with the rice mixture, and put it in a casserole dish.

Cover with foil and bake for 10 minutes.

Take off the foil and bake for another 10 minutes. Remove from the oven and add more cheese. Put back in the oven and bake for 5 more minutes.
