You can serve this just like it is or add a nice side salad to go with it. It’s one of the best meals for a busy weeknight dinner.

I’ll stock up on chicken when it’s on sale at the store because I love keeping it on hand for simple chicken recipes like this one. You seriously can’t go wrong.

How do I make sure that the chicken is fully cooked?

Cooking chicken thoroughly is essential to avoid getting sick from consuming undercooked meat. To ensure that the chicken is fully cooked, it’s essential to use a meat thermometer to check the internal temperature of the chicken.

The chicken should be cooked until the internal temperature reaches 165°F (74°C). It’s important to check several parts of the chicken to ensure the entire bird is fully cooked.

Some people may rely on the color of the meat, but this is not always an accurate way to determine if the chicken is fully cooked.

Cutting into the chicken to check for pink meat is also not recommended, as this can let bacteria into the meat.

To avoid any risk of food poisoning, always cook chicken thoroughly and check the internal temperature with a meat thermometer.

How do I know when potatoes are fully cooked?

Potatoes often take longer than other vegetables, so knowing when they’re fully cooked is essential.

One of the easiest ways to know is by using a fork to test the center of the potatoes. If the fork slides in without any resistance and cuts the potato into two easily, it’s cooked.

Also, inspect the surface of the potatoes. If the skin is starting to peel away from the flesh, and the potato appears to be shrinking slightly, it indicates that it’s fully cooked.

Another sign that shows when potatoes are fully cooked is when they become tender throughout.

It’s worth noting that overcooking can turn potatoes into mush, making it essential to test them regularly.

Ingredients

  • 1½ pounds of red potatoes, halved
  • 
1 chopped red onion
  • 
6-8 whole garlic cloves, finely minced

  • 3 T. extra virgin olive oil

  • 2 T. fresh minced rosemary
  • 
Sea salt and black pepper, to taste

  • 6 bone-in, skin-on chicken thighs 

  • 10-12 sprigs fresh thyme 

  • 1 lemon, cut into 8 wedges

  • 2 cups of fresh kale, stems removed, and thinly sliced

Instructions

  1. Preheat the oven to 400 degrees. Add parchment paper to a baking sheet.
  2. Add the potatoes, onions, garlic, olive oil, and fresh rosemary in a mixing bowl. Season with salt and pepper. Put the veggies on the baking sheet.
  3. Add the chicken thighs to the bowl of seasoning and ingredients and coat. Add any remaining rosemary and olive oil and cat. Add more salt and pepper if needed.
  4. Put the coated chicken on the baking sheet in between the veggies and lemon slices and fresh thyme.
  5. Put the pan in the oven and roast for 30-35 minutes. Remove from the baking sheet and stir in the fresh kale.
  6. Put the sheet back into the oven and roast for another 10-12 minutes, until the chicken is thoroughly cooked.
  7. Remove and put the chicken and potatoes on a serving platter and cover loosely with foil.
  8. Let the chicken rest for 5 minutes.
