My kids say this Tex-Mex crockpot cheesy chicken looks a bit “different” because the cream cheese and salsa give it an orange color, but they seriously love it… all of them!

But back to this awesome southwest chicken and cheese made in the crockpot. You guys, this is seriously one yummy recipe.

It’s the mixture of the cheese, the salsa, the chicken and everything that just makes for a really fun dinner.

Some crockpot chicken and cheese recipes are much more complicated with bell pepper, cream of chicken soup (or cream of mushroom) and green chiles. But really, that’s just a shadow of the fabulous tex-mex chicken you get with this recipe.

How to Make Slow Cooker Chicken and Cheese with Black Beans

Ok. So, just a few tips before you scroll all the way down to the recipe and just get to it.

First, I prefer chicken breasts, but I prefer that stiffer texture, especially with a slow cooker recipe. It’s not going to be dry because it’s such a slow and low temperature it’s cooking at, but that stiffer texture will hold up better in the crockpot.

Now, that being said, you’ll notice there’s not a ton of liquid in this recipe. There’s no chicken broth or any soups. And no cheddar cheese.

The reason: you’re not making cheddar cheese soup with chicken in it. You’re wanting a more casserole texture. So, there’s not supposed to be a lot of liquid.

The last step in the recipe is to add the cream cheese, then cover and cook for a bit longer. You don’t have to cook for a million years or anything–just until the cheese is melted.

Then add a little salt and pepper to taste, maybe a little garlic powder (how much will vary based on what you like your tex mex chicken to taste like).

You can top with a little sour cream or corn salsa, but really, you don’t need anything else–just serve over rice!

Slow Cooker Chicken and Cheese

Prep Time: 10 minutes
Cook Time: 5 hours
Total Time: 5 hours 10 minutes

Ingredients

  • 4 boneless chicken breasts
  • 1 15 1/2 oz can black beans, drained
  • 1 15 oz can corn, drained
  • 1 15 oz jar salsa, any kind
  • 1 8 oz package cream cheese

Instructions

  1. Place chicken breasts in slow cooker. Add the black beans, corn and salsa.
  2. If breasts are fresh, Cook on high for 4 1/2 hours or until meat is cooked through.
  3. If the breasts are frozen, you will need to cook on high for 6-7 hours.
  4. Add cream cheese and cook for 30 minutes more or until melted and warm. Stir and serve.

Hey Kelli !! This recipe looks great !!The first step says put the frozen chicken breasts in but the ingredients don't say frozen chicken breast. I got fresh, is that going to alter the cooking time with them not being frozen or should I just freeze them first ?
