White Chicken Chili Recipe
This White Chicken Chili Recipe is perfect for the cooler months.
Ingredients
- 3 15-oz. cans Great Northern beans, divided
- 1/3 cup of water
- 1½ pounds of boneless, skinless chicken breasts, cut into chunks
- ½ small red onion, diced
- 3-4 cloves garlic, chopped
- 1 4-ounce can mild green chilies
- 1 Tablespoon ground cumin
- 2 teaspoon of chili powder
- 1 teaspoon of Mexican oregano
- 1 teaspoon of ground coriander
- ½ teaspoon of chipotle pepper powder
- 3 cups of chicken broth, preferably organic
- Sea salt and black pepper, to taste
- 1½ cup of Mexican blend cheese, finely shredded, divided
Optional, to serve:
- 1 medium jalapeño pepper
- 2 large limes
- 1 small avocado
- ¼ cup of fresh cilantro
Instructions
- Start by draining and rinsing the canned beans. Put half of them into the food processor with a bit of water and process until blended but a little chunky. Once done, put the mixture into your crockpot with the rest of the whole beans, too.
- Next, go ahead and add in the chicken, red onion, garlic, green chilies, cumin, chili powder, Mexican oregano, coriander, chipotle pepper powder, and chicken broth. Stir and cover.
- Cook for 4 hours on high or 8 hours on low.
- Once the time is done, take off the lid and add in 1 cup of shredded cheese. Stir. Cover and let cheese melt for a couple of minutes.
- Serve with toppings of choice.
