But, let’s get back to these Chicken Kabobs! Chunks of boneless skinless chicken breasts, fresh bells peppers and red onion are the perfect combinations to throw on the grill. I spiced things up a bit with an easy homemade marinade that only takes a few minutes to whip up.

If you re not a white chicken meat lover, you could make this with boneless and skinless chicken thighs instead. Just follow the recipe below to cook the chicken.

Tips for making Chicken Kabobs:

Marinate, marinate, marinate. Did I mention you should be marinating the chicken pieces? It is key to having the recipe turn out moist, juicy and full of fresh flavor.

I like to marinate the meat and veggies overnight. If you are pressed for time, I highly suggest at least 3-4 hours prior to grilling.

I like to thread the chicken and veggies onto the skewers before marinating. However, you can also throw the meat and veggies into a bowl and add the marinade. Simply skewer everything prior to grilling.

Preheat your George Foreman Grill. Just like any other grill you want it to be nice and hot so the meat and veggies cook evenly.

A food thermometer is what you need to use. Just make sure to keep the tip of the thermometer away from the metal skewers when taking the internal temperature of this great recipe. The reading should be at least 165 degrees.

Ingredients

  • 1.5 pounds boneless, skinless chicken breast, cut into cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons Worcestershire sauce½ tablespoon lime juice
  • 1/3 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon pepper

Instructions

    Place the chicken, peppers, and onion on kabob sticks and lay the kabobs in shallow baking dish.

    In a small bowl, combine the olive oil, vinegar, soy sauce, Worcestershire sauce, lime juice, brown sugar, salt, garlic powder, and pepper. Whisk to mix.

    Pour the marinade over the kabobs. Cover and refrigerate for at least four hours and up to overnight.

    When ready to cook, preheat the George Foreman grill. When the grill is warm, place the kabobs on the grill and close the lid. Cook for 6 minutes, then flip the kabobs one-quarter turn and cook for an additional 6 to 8 minutes, until chicken is cooked through.

What temperature for the grill…… as stated “warm”. That doesn’t seem very hot… 12-14 minutes seems long for chicken…… Thank you for your reply…..recipe sounds delicious

The temperature of the grill on medium to medium high heat will vary between 350-375 degrees. To ensure that the chicken is fully cooked all the way before removing off the heat, use a meat thermometer to check the internal temperature of the chicken. As long as the internal temperature of the chicken is 165 degrees, the chicken should be fully cooked and ready to eat. This is the safest way to ensure that the chicken is cooked all the way through. Thanks!
