Tex Mex Chicken Chowder Recipe

The longest part of this recipe is cooking up the chicken so that it’s cooked and safe to eat. Make certain that you follow the directions in the recipe card below so that you’re following along with all the steps to get the most flavor possible.

My boys really like this recipe and have gotten to a point where they ask for it by request. I don’t mind making this at all either so I’m happy to oblige!

It’s a combination of ingredients and flavors that are Mexican and American and are pretty popular throughout the US. This is typically the type of dish that you’ll find in a lot of Mexican restaurants as well.

It all really comes down to the flavor and ingredients. Mexican food tends to use different spices than you’ll find in Tex Mex and stays away from a lot of the ingredients that you’ll find used widely in Tex Mex meals.

Tex Mex Chicken Chowder Recipe

You're going to love this simple and delicious Tex Mex Chicken Chowder Recipe.

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cut-up sweet onion
  • 1 teaspoon of minced garlic
  • 4 peeled and cut potatoes
  • 4 peeled and sliced carrots
  • 4 cut up celery stems
  • 1 package of frozen corn
  • 1 package of Santa Fe Medley
  • 1 can of black beans
  • 1 can of chopped green Chiles (6 ounces)
  • 1 can of Stewed Tomatoes (28 ounces)
  • 1 gallon of water
  • 4 chicken bullion cubes
  • 1 Tablespoon of Cumin
  • 1 Tablespoon of Chili powder
  • 1 teaspoon of garlic salt
  • 1 teaspoon of seasoned salt
  • 2 Tablespoons of Brown sugar

Instructions

    In your pot add a teaspoon of butter and let it melt. Put in the chicken breasts and cook them for about 30 minutes until fully cooked. Once done, cut it into small pieces.

    Next, add the onion and cook for about 10 minutes. Add 1/4 of the water and 4 bullion cubes. Simmer for 3 minutes then break up the bullion into the water.

    Put the carrots, celery, corn, potatoes, black beans, Santa fe medley, green chiles, stewed tomatoes, and the rest of the water. Stir.

    Then add the chili powder, cumin, garlic salt, salt, and brown sugar. Stir and boil.

    Once boiling, turn the heat to low and simmer for 2 hours. You'll want to stir every once in a while.

    Put a little bit of the chowder into a small pot and cool. You can then add in more seasonings if needed. You'll want to cook in those seasonings for about 15 minutes to really enhance the flavor.

    Then add in the minced garlic and cook for about 10 minutes.

    Serve chowder!
