How do you thicken coconut curry soup?
If you decide that you want your soup to bit a little bit thicker, you can add in a little bit of cornstarch and stir it in. This can help to thicken the soup without having to add in a ton of other ingredients.

- 2 Tablespoons of extra virgin olive oil
- 1 yellow onion, diced
- 1 pound of boneless skinless chicken breast, cubed
- 3-4 minced garlic cloves
- 1 peeled and minced ginger piece
- 1½ teaspoons of ground coriander
- 3 Tablespoons of Thai red curry paste
- 1 diced green bell pepper
- 1 diced red bell pepper
- 1 diced yellow bell pepper
- 1 14-ounce can of coconut milk
- 2 cups of baby spinach
- 2 Tablespoons of lime juice
- 1 Tablespoon of maple syrup
- 3 Tablespoons of chopped fresh cilantro
- 1 sliced lime
- Sea salt and black pepper
Heat oil in a skillet over medium heat. Put in the onion and cook for about 4-5 minutes.
Add in the chicken and cook for about 4-5 minutes, stirring off and on the whole time.
Next, add in the garlic, ginger, coriander, and red curry paste. Once combined, cook for 1-2 minutes.
Then add in the peppers and stir. Cook this for about 3-4 minutes.
Pour in the coconut milk and simmer for about 4-5 minutes. Add lime juice, spinach, and maple syrup. Serve with cilantro and lime slices.
