Once you add in the coconut milk and stir, you’re going to realize why this recipe called for the addition of that flavorful and fragrant liquid. The coconut milk adds so much depth to the taste! Combined with the curry flavors, this dish really is one of our favorite soup recipes to date.
And since my boys eat a ton and are always looking for easy meals, this soup recipe is one that we love to make at least a couple of times throughout the year. It’s always a welcomed dinner that no one wants to miss.
Can I use a rotisserie chicken for this recipe?
For sure. If you’re wanting to cut down on time, you can use leftover chicken or a precooked chicken as well. This is a super simple solution that can make your prepping time even less.

If you decide that you want your soup to bit a little bit thicker, you can add in a little bit of cornstarch and stir it in. This can help to thicken the soup without having to add in a ton of other ingredients.

Thai Coconut Curry Chicken Soup
This Thai Coconut Curry Chicken Soup has a sweet taste with hearty flavors.
Ingredients
- 2 Tablespoons of extra virgin olive oil
- 1 yellow onion, diced
- 1 pound of boneless skinless chicken breast, cubed
- 3-4 minced garlic cloves
- 1 peeled and minced ginger piece
- 1½ teaspoons of ground coriander
- 3 Tablespoons of Thai red curry paste
- 1 diced green bell pepper
- 1 diced red bell pepper
- 1 diced yellow bell pepper
- 1 14-ounce can of coconut milk
- 2 cups of baby spinach
- 2 Tablespoons of lime juice
- 1 Tablespoon of maple syrup
- 3 Tablespoons of chopped fresh cilantro
- 1 sliced lime
- Sea salt and black pepper
Instructions
- Heat oil in a skillet over medium heat. Put in the onion and cook for about 4-5 minutes.
- Add in the chicken and cook for about 4-5 minutes, stirring off and on the whole time.
- Next, add in the garlic, ginger, coriander, and red curry paste.
- Once combined, cook for 1-2 minutes.
- Then add in the peppers and stir. Cook this for about 3-4 minutes.
- Pour in the coconut milk and simmer for about 4-5 minutes.
- Add lime juice, spinach, and maple syrup. Serve with cilantro and lime slices.
