Hearty Steak and Potatoes Soup Recipe

Since you can make this up in the Instant Pot, this is such a fast and easy recipe. I used to use my slow cooker but I’ve switched to the Instant Pot instead. (Some people like to cook this dish in a Dutch oven as well, but you have to be certain to cook until the potatoes are tender.) Time is valuable when you’re a mom, right?!
Way back, many years ago, I spent 3 days in London and had such amazing food. This hearty soup reminds me of one of my most favorite meals there! So, every time I make it, I am transported to another place and time.
Steak and Potatoes Soup Recipe
This recipe calls for London broil steak but you can use flank steak or any type that you happen to have in the house. You’ll only need about 20 minutes of time to cook up this tasty dish as well! Just add a bit of salt and pepper and you’re ready to rock.
My boys LOVE this soup because it’s full of hearty flavor. They request it, and I make it. I don’t mind either because I love how tasty this potato soup recipe is!
Do you cook the steak before adding it to the Instant Pot?
Nope! This is why I love the Instant Pot. It literally cooks the steak up for you. Add in a bit of olive oil, and cook it up with ease!

Ingredients
- • 2 pounds of London broil (or steak of choice)
- • 1/8 cup of Canola oil
- • 1 t of Italian seasoning
- • 1 t of garlic powder
- • 1/2 cup of grated parmesan cheese
- • 6 ounces of Mushrooms (sliced)
- • 8 cups of Beef broth or stock
- • 6 cups of small red potatoes (quartered)
- • 1/2 t of Pepper
- • 1/4 t of Salt
- • 1 Yellow onion (diced)
- • 2 cups of Baby carrots
- • 1/8 t of dried thyme
- • 1 t of Dried basil
- • 2 stalks Celery (diced)
Instructions
Put the Instant Pot on saute mode and add in oil, Italian seasoning, and garlic powder.
Saute the steak in the Instant Pot and cut it into small pieces.
Add in 1 cup of beef broth to deglaze and stir.
Put in the rest of the beef broth plus the potatoes, carrots, onions, celery, and remaining spices.
Put the pressure on high and set for 4 minutes. Once the time is up, manually release the pressure.
Add the mushrooms, parmesan cheese, and steak if not still in the pot.
Let rest for 1/2 hour then serve.
