- 8 eggs, lightly beaten
- ¼ cup chunky salsa
- 1 tablespoon butter
- 1 jalapeno, diced
- ½ small onion, diced
- 1 cup shredded Monterrey jack cheese
- Sour cream and sliced jalapeno for serving
Instructions
1.Start by mixing together the salsa and your eggs into a large bowl and set aside once done.
2.Next, use a cast iron and place it over medium heat. Add your butter and let it melt.
3.Once the butter has melted completely, add in the onion and the jalapeno and saute.
4.Once done, add in the egg mixture and cook. You're going to want to stir occasionally until the eggs are cooked.
5.Take off the heat and stir in the cheese.
