Strawberry Creme Wafer Cupcakes are going to be your new favorite treat! Not only are they light and fluffy but that strawberry flavor is out of this world.

These are perfect for a summer dessert and are a great way to fill the whole house with a sweet strawberry aroma easily.

Adding the wafers on top is like having two treats in one. The soft texture of the cupcakes pairs perfectly with the crunch of the wafers.

Strawberry Creme Wafer Cupcakes

Making homemade cupcakes isn’t hard to do just make sure that you have a nice and creamy batter once all the ingredients are added to put into your cupcake liners. This will make them light and fluffy and not spew over the top while baking.

My boys love all things strawberry so this recipe is always a win. It’s one of those recipes that looks fancy enough to serve to your family and friends at a party or gathering and is easy enough to whip up quickly to enjoy a nice snacking day at home.

Can you make homemade frosting for these cupcakes?

Absolutely. Store-bought is quicker but if you want to make your own frosting, go for it! Use your favorite frosting recipe and make sure to let the cupcakes cool completely before adding the frosting on top. A little bit of powdered sugar, milk, and vanilla mixed together makes an awesome homemade frosting, too!

Whipped cream frosting is also a favorite as well! I’ve also seen where some people add a few fresh strawberries on top or a little dab or strawberry puree as well and I think that looks yummy, too.

How do you keep cupcakes from drying out?

There are actually a few things that you can do to have moist cupcakes. One trick that I learned a long time ago is that a little (tiny) bit of sour cream or greek yogurt being put into the dry ingredients and wet ingredients when being mixed can help add a little bit of moisture.

The other tip is that you don’t want to overbake your cupcakes in the oven. Once you preheat the oven to 350 degrees, set the timer for the exact time you want them to bake, and then make sure to not let them overcook once they’re done.

Strawberry Creme Wafer Cupcakes

Yield: 15-18 cupcakes
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes

You're going to love the ease of these simple strawberry cupcakes!

Ingredients

  • 1 cup of butter, melted
  • 1 cup of sugar
  • 4 eggs
  • 3 teaspoons of vanilla extract
  • 2 1/4 cups of flour
  • ¾ cup of strawberry jam (or fresh strawberries that are mashed up work, too!)
  • 2 cups of frosting
  • Cookies for garnish

Instructions

Preheat the oven to 350 degrees.

Beat together the sugar, butter, and eggs well.

Add in the strawberry jam and use a whisk to mix in.

Pour in the vanilla and mix.

Add the flour and stir until it is combined.

Put the cupcake batter into the liners about 3/4 full.

Put in the oven and bake for 25 minutes or until done.

Let cool and frost. Once the frosting is added, top with the cookies that are broken and crushed up.
