The steps to make these cupcakes aren’t difficult but you do want to plan ahead and be sure that you have all the ingredients on hand before getting started!
Since we love sweets, cupcakes are always a hit. The boys love to help decorate the cupcakes and I’m more than happy to have some help in the kitchen! Baking is a fun family affair!

If you don’t let the cupcakes cool down all the way, the icing is going to melt or slide off. Just be patient – even though it’s hard to do!

What is the best way to store leftover cupcakes?
Make sure that you store the cupcakes in an airtight container and keep them in a place that isn’t hot. I like to keep them stored in the fridge, but you can easily store them at room temperature, too.

Blue Raspberry Soda Cupcake Recipe
This Blue Raspberry Soda Cupcake Recipe is one of the best!
Ingredients
Cupcake Ingredients:
- 1 box of white cake mix
- 1/2 cup vegetable oil
- 4 egg whites
- 1 ¼-1 ¾ cups Blue Raspberry soda
- *Blue raspberry Jello (divided)
Frosting Ingredients
- 2 sticks of softened salted butter
- ½ cup of softened cream cheese
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 4 cups powdered sugar
- 1 tablespoon half and half
- 2 tablespoons Blue Raspberry soda
- *Blue Raspberry Jello (divided)
- Blue food coloring (optional)
- large piping bag and tip
- Paper straws (optional)
- Blue sprinkles (optional)
Instructions
Preheat the oven to 350 degrees. Line a cupcake tin with cupcake liners.
Add the cake mix to a bowl and add in the oil, egg whites, soda, and mix. Add in 1/2-3/4 of the jello.
Put the batter into the cupcake liner and fill them 2/3 full. Bake for 18-20 minutes. Let the cupcakes cool.
Directions for Frosting:
Put the butter and cream cheese in a bowl and mix until fluffy.
Add in the salt and vanilla.
Mix in the rest of the jello.
Mix the half and half (or milk) and the soda together in a large bowl. This is important, don't skip it.
Mix in the powdered sugar 1 cup at a time and add a little bit of the liquid mixture in between each cup.
Mix for 1-2 minutes and let it form stiff peaks. Don't overmix.
If you want to add food coloring, add it.
Fill the piping bag and frost the cupcakes. Add sprinkles and straw.

For a sheet cake, you might need to adjust the baking time. Monitor closely and bake until a toothpick comes out clean. Enjoy baking!
