Fun Rocky Road Cupcakes
Combining the dry ingredients into a large bowl and mixing them with the wet ingredients is such a simple process. Make certain that you preheat your oven to 350 degrees (or whatever temp the cake mix box says) and fill the cupcake liners 3/4 full. I actually use a 1/2 cup as my measuring scoop because it’s less messy.
My boys really like these cupcakes. So much so that they have a hard time letting them cool completely before devouring them up. But patience is a virtue and they’re learning that it’s worth the wait!

How do you know when cupcakes are fully baked?
The best way is to check the inside of the cupcake. Using a toothpick inserted into the middle of the cupcake will tell you if your cupcake is cooked all the way through. If the toothpick comes out clean, the cupcakes are done baking and ready to be pulled from the oven.
More Marshmallow Recipes:
- 1 box chocolate cake mix plus the ingredients to make it (Divide ingredients and cake mix in half - the majority boxed mixes make 24 cupcakes, and for this recipe, you’ll want to make 12)
- 12 large marshmallows
- 1 cup of unsalted butter, softened
- 4 cups of confectioners’ sugar
- 2 tablespoon of cocoa powder
- 2-3 tablespoons of milk
- ½ cup of pecans, chopped
- 1/3 cup of miniature marshmallows, cut into small pieces
Make up the cupcake mixture according to the directions on the box.
Once done, pour into the cupcake liners in the tin about 2/3 full. Put in the oven and bake according to the time on the box.
Remove from oven but leave the oven on. Take a knife and dig out a small hole in the middle of each cupcake. About 1 inch in size and 1/2 inch deep.
Put a big marshmallow in the hole and bake the cupcakes for another 5 minutes. Cool once removed from the oven.
Take a different bowl and mix the butter, confectioners’ sugar,
cocoa powder, and milk. Start on low and then go up to high.
Put a scoop of the buttercream frosting into piping bag with a #21 tip.
Frost the cupcakes.
Add some chopped pecans and mini marshmallows on top. Enjoy!
