Deliciously Perfect Lemon Blueberry Cupcakes

These Lemon Blueberry Cupcakes have such an amazing flavor! They’re made with fresh blueberries and topped with sweet lemon icing that will have you grabbing another one fast! These light and fluffy cupcakes have the best lemon flavor. Check out our other easy blueberry recipes!

Made with fresh lemons, lemon juice, and filled with fresh blueberries – the flavor is the best. Have fun baking up these cupcakes in cupcake liners and enjoying them with family and friends.

Make certain that you let the cupcakes get to room temperature which will take about 20 minutes or so. Once they’ve cooled down, they’ll be ready to frost and enjoy!

Lemon Blueberry Cupcakes

Make certain to take your time measuring out and adding the ingredients to make the flour mixture. Use a separate bowl to make the frosting, and try not to sneak any samples! Baking cupcakes from scratch and homemade icing is such a fun treat!

My boys love this simple recipe and ask me to make it all the time. I love to whip them up once it’s blueberry season so I can use fresh blueberries for that extra added flavor! They never complain about this fact at all!

Can you use frozen blueberries for this recipe?

You can try but fresh will be better because they won’t release as much liquid as the frozen blueberries. If at all possible, refrain from using frozen fruit in this recipe. It might not make up right and cause soggy cupcakes.

How do you know when cupcakes are done baking?

Use the toothpick (or butter knife) test. Just insert the toothpick into the middle of the cupcake and if it comes out clean, the cupcakes are done cooking and need to be taken out of the oven. The toothpick inserted method works like a charm!

Lemon Blueberry Cupcakes

Yield: 12-15

This cupcake recipe is full of lemon flavor!

Ingredients

Cupcake

  • ⦁ 1¼ cup all-purpose flour
  • ⦁ ⅓ t salt
  • ⦁ 1 t baking powder
  • ⦁ 1½ cup of fresh blueberries
  • ⦁ ½ cup of sour cream
  • ⦁ 1 t lemon extract
  • ⦁ 8 ounces of butter softened
  • ⦁ ¾ cups of sugar
  • ⦁ 2  eggs

Lemon Filling

  • ⦁ 3  eggs
  • ⦁ ⅔ cup of granulated sugar
  • ⦁ 1 T lemon zest
  • ⦁ ⅓ cup of lemon juice
  • ⦁ 4 T butter

Icing

  • ⦁ 1 cup of butter softened
  • ⦁ 1 t lemon extract
  • ⦁ 4 cups of powdered sugar
  • ⦁ 2 T milk

Instructions

Cupcakes

Preheat the oven to 350 degrees. Put the cupcake liners in the pan.

Add salt, baking powder, and 1 cup of the flour into the bowl and mix.

Add blueberries to a different bowl and sprinkle in 1/4 cup of flour. Mix gently. set aside.

Use a mixer and combine butter and sugar until fluffy.

Add sour cream, eggs, and extract to the mixed butter mixture. Combine. Add in the dry mixture and mix.

Fold in blueberries and fill cupcake liners about 3/4 full. Put in the oven and bake for 15-20 minutes.

Let cool in the pan for 15 minutes then move to a cooling rack.


Lemon Filling

In a saucepan, mix the lemon juice, butter, and lemon zest. Add in sugar and mix. Add in eggs and mix.

Cook over medium-low heat stirring often. The mixture should thicken and coat the back of a spoon.

Take off heat and let cool entirely.


Icing

Add butter and extract in a bowl until creamy. Mix in powdered sugar.

To make cupcakes

Use an apple corer or a spoon and cut out a small hole. Add in the lemon filling.

Pipe icing onto the cupcake.

Top with blueberries.
