Last week was one crazy week! I had so much going on from new puppies to makeovers. From birthday parties to blogging plans. This week looks like it is going to be just as crazy. In fact, I think the next 4 weeks (until school is out) promise to be crazy. Isn’t it always like that? Thanks goodness for menu planning or my poor kids would never eat. LOL!
For menu plan week 18, I have included some fun resources to help you celebrate Cinco de Mayo. I hope you and your children enjoy them!
Week Eighteen Menu Plan:

This week is designed to use up what you may have remaining in your pantry. Only buy the items that you are totally out of.
Breakfast
Monday- Bacon, Eggs & Toast
Tuesday- Country Breakfast Bowls at Budget Bytes
Wednesday- French Toast Sticks (leftovers from last week in freezer ham slices).
Thursday – DIY Freezer Oatmeal Cups (See note on Week 14) at Cupcakes & Kale Chips
Friday – Favorite Cereal with available fruit.
Saturday – French Toast Bake at Lil’ Luna
Sunday – End of the month breakfast bake. Spray casserole with cooking spray, or wipe with olive oil, chop any available breakfast meat (bacon, sausage, ham), mix in 3-4 large eggs, and available cheese, sprinkle in leftover veggies such as spinach, broccoli, or tomatoes). Bake at 350 15-20 minutes until eggs are cooked through and just starting to brown.
Lunch
Monday- Lettuce Wraps using On-hand Deli Meat, Chopped Veggies, and an On-hand Fruit.
Tuesday– Pizza Quesadillas, use up any leftover cheese, marinara sauce, tortillas and lunch meat. Add an extra cup of marinara for dipping. Any remaining snacks you have available.
Wednesday- Turkey Meatballs (leftovers from dinner week 17), lettuce and baby carrots, with frozen grapes.
Thursday – Peanut Butter & Banana Roll-ups using a wrap or tortillas, Celery Sticks or sliced cucumbers, Potato Chips
Friday—Leftover, Corn Chowder with Oyster Crackers, & Fruit Cups
Saturday – Asian Chicken Kabobs at 3 Boys and a Dog Hint: Use up any leftover veggies to build your kabobs.
Sunday—Grilled Cheese and Tomato Soup
Dinner
Monday- Freezer Meal: Slow Cooker Pineapple Chicken from Crystal & Co.
Tuesday-Freezer Meal: Slow Cooker Potato & Corn Chowder at Damn Delicious
Wednesday-Grilled Chipotle Chicken Wings at 3 Boys and a Dog with Celery Sticks & Ranch Dip
Thursday – Crock pot Sloppy Joes at Crystal & Co. with Broccoli on the side.
Friday – Tangy Crockpot Pork Stew at 3 Boys and a Dog (If you have leftover pork tenderloin from previous weeks you can use that, otherwise you will need to buy a medium pork roast).
Saturday – Meatball Sub Casserole at Family Fresh Meals
Sunday – Baked Potato Bar – using leftovers create a potato bar using leftover veggies, cheese, and proteins.
