Why is this time of the year so insanely busy? It is like everyone suddenly realized that they only have a few weeks left with my kids and need to pack in all the learning and extra-curricular things they can before Summer. LOL!
Plus, I realized that I only have a few short weeks without my family home and need to tie up all the lose ends before they descend upon me!
I did a quick brain dump and have 25 items on my to do list. Will I get all 25 done today, no… however, I am running timers and HAVE to knock out a big portion. That means, no getting side tracked on Pinterest, not getting caught up on the phone, and no games on Facebook!
When our household (and work) to do lists are miles long, fitting dinner in can seem impossible. However, this week’s menu plan is quick and delicious! So, getting dinner on the table won’t be a problem!
What are your tricks to knocking out your to do lists?

Monday- Maple Sausage Breakfast Rolls at It’s Yummi
Tuesday- Oatmeal with raisins and cinnamon
Wednesday- Banana, Family Favorite Cereal Bars, with Creamy Strawberry Smoothie at 3 Boys and a Dog
Thursday – Low Carb Breakfast Scramble at Kori at Home
Friday – Crispy Bacon and Buttermilk Biscuits Sandwiches
Saturday – Strawberry Shortcake Pancakes at Taste of Lizzy T
(Make up some extra mini-pancakes for lunch week 20).
Sunday – Ham, Egg & Cheese Roll-Ups at Delish with a little help from dad, even little kids can make this simple breakfast for mom! Add a slice of toast and some fresh berries & orange juice and it might just be a delicious breakfast in bed for sweet mamas everywhere.
Monday- Yogurt Cups, Celery Sticks, Grapes, Almonds,
Tuesday- Lemony Cucumber Sandwiches from Amelia’s Kitchen with bag of chips (affiliate link) and peaches fruit cup.
Wednesday- Easy Pretzel Dogs from Dash of Sanity, with crunchy Cole slaw and apple slices.
Thursday – Cranberry Chicken Salad Wraps from Living Well Mom with pretzel sticks and
Friday – BBQ Chicken Bites, White Rice & Steamed Broccoli (This is easy to make up as a bento box lunch, simply add to it throughout the week using leftover dinner components.)
Saturday – Philly Cheesesteak Sliders from Home Made Interest (Cook up extra meat for leftover lunch next week).
Sunday – It’s Mother’s Day and most likely your husband will take you out to eat! But, if that’s not your tradition, and you want something easy to do in the crockpot, here’s an idea: Slow Cooker Pork Chops with Sweet Potatoes from 3 Boys and a Dog
Monday- Slow Cooker Mongolian Chicken from The Recipe Critic with white rice on Side (Make enough rice for leftovers to have with lunch on Friday)
Tuesday- Clean Eating Tilapia from 3 Boys and Dog with Steamed Broccoli (Reserve leftover broccoli for lunch on Friday) and roasted red potatoes.
Wednesday- Whole Roasted Chicken, (Reserve leftover chicken. Shred some meat for chicken salad lunch on Thursday and cube some meat and add BBQ Sauce for lunch Friday), mashed potatoes and buttered corn on the cob.
Thursday – Apple Pork Chops from Wondermom Wannabe serve with a side of asparagus
Saturday – Creamy Tomato & Spinach Pasta from Budget Bytes with a spinach and strawberry salad.
