The flavor leans slightly towards sweet but is still quite savory, which allows it to work well both as a side dish and an ingredient in recipes.

How do I store leftover soup?

Storing leftover soup properly is essential for preserving its nutritional value and preventing the growth of bacteria.

Any remaining portions should be transferred to an airtight container immediately after your meal to optimize safety and flavor.

Before securing a lid on the container, it is best to spread the soup to create a surface area that facilitates rapid cooling.

Once this has been completed, store your soup in the refrigerator for no longer than four days or in the freezer for up to three months.

Finally, when reheating leftovers, ensure the temperature reaches 165 degrees Fahrenheit before consuming.

Butternut Squash Soup is a great way to make soup for cold weather. Hearty and delicious, everyone will need to fill their bowls a couple of times!


  • 3 butternut squash
  • 1 T olive oil 
  • ½ T olive oil 
  • ½ cup of diced green onions
  • 1½ T garlic 
  • 1 boneless skinless chicken breast
  • ¼ tsp salt 
  • ½ tsp salt 
  • 1 tsp ground black pepper 
  • ½ tsp dried thyme 
  • 1 tsp dry sage
  • ⅛ tsp red pepper flakes
  • 4 cups chicken stock/bone broth
  • ½ cup coconut cream
  • ½ cup sour cream
  • ¼ tsp cumin
  • ¼ tsp ground nutmeg
  • 1 T honey
  • ½ cup of real bacon bits

Coconut Crema Ingredients:

  • 1 cup sour cream
  • 1 cup coconut cream (canned)
  • ¾ tsp salt
  • ¼ tsp lime juice (concentrated)


  1. Preheat the oven to 400 degrees.
  2. Add aluminum foil to a baking sheet. Grab the cut butter squash and put 1/2 T of oil on the cut sides. Then sprinkle on 1/4 tsp of salt, 1/2 tsp of black pepper, 1/8 tsp of thyme, and 1/2 tsp of sage.
  3. Put the squash face down on the baking sheet.
  4. Bake for 30-45 minutes. Let cool.
  5. Cut the chicken into cubes. Put 1/2 T of olive oil into a large soup pot on medium heat.
  6. Saute the diced onions and garlic. This will take about 4 minutes.
  7. Add the cubed chicken into the soup pot and also add 1/4 tsp salt, 1/2 tsp black pepper, and 1/8 tsp of red pepper flakes.
  8. Cook the chicken all the way through, about 4-6 minutes, and then take the chicken out of the pot but leave the garlic and onions.
  9. Remove the peel off the baked squash and cut the squash into cubes. Add the squash to the soup pan with 4 cups of chicken stock, 1/2 cup coconut cream, 1/2 cup sour cream, 1/4 tsp cumin, 1/4 tsp nutmeg, and 1 T of honey.
  10. Let the soup simmer and cook for 10-15 minutes. Take off the heat.
  11. Puree the soup with an immersion blender or blender. Add more seasonings if needed.
  12. Add the diced cooked chicken to the soup. Put on a dollop of the coconut crema. Add bacon bits on top.

Coconut Crema Directions:

  1. Whish the coconut cream and sour cream in a bowl.
  2. Add 3/4 tsp salt and 1/4 tsp lime juice. Whisk to combine. Set aside at room temperature for 2 hours or overnight to thicken.
  3. Add to the soup as a topping.
