This Baked Chicken and Rice Recipe is a fast and easy dinner recipe. Simple ingredients!

Ingredients

  • 2 Tablespoon extra virgin olive oil, divided
  • 
4 4-ounces boneless, skinless chicken breasts

  • ½ medium red onion, diced

  • 1 cup of long-grain brown rice, rinsed and drained
  • 
3 cups chicken broth

Instructions

  1. Preheat the oven to 350 degrees. Prepare a 9X13-inch baking dish with 1 T olive oil.
  2. Heat the rest of the oil in a skillet over medium heat. Add the chicken breasts and season with pepper and salt. Cook until the chicken is golden brown. (about 3-4 minutes per side)
  3. Add the diced onion and rice to the baking dish. Add salt and pepper and stir.
  4. Pour the chicken broth over the rice and add the chicken breasts.
  5. Cover with aluminum foil and bake for 40 minutes. Uncover and then bake for 15-20 minutes or until the rice is fully cooked.
  6. Take out of the oven and cool for 5 minutes. Then fluff the rice with a fork. Serve.
