Baked Chicken and Rice Recipe
This Baked Chicken and Rice Recipe is a fast and easy dinner recipe. Simple ingredients!
Ingredients
- 2 Tablespoon extra virgin olive oil, divided
- 4 4-ounces boneless, skinless chicken breasts
- ½ medium red onion, diced
- 1 cup of long-grain brown rice, rinsed and drained
- 3 cups chicken broth
Instructions
- Preheat the oven to 350 degrees. Prepare a 9X13-inch baking dish with 1 T olive oil.
- Heat the rest of the oil in a skillet over medium heat. Add the chicken breasts and season with pepper and salt. Cook until the chicken is golden brown. (about 3-4 minutes per side)
- Add the diced onion and rice to the baking dish. Add salt and pepper and stir.
- Pour the chicken broth over the rice and add the chicken breasts.
- Cover with aluminum foil and bake for 40 minutes. Uncover and then bake for 15-20 minutes or until the rice is fully cooked.
- Take out of the oven and cool for 5 minutes. Then fluff the rice with a fork. Serve.
