This recipe calls for 1/2 a cup of homemade crumbled carrot cake. I suggest that you use this Carrot Coffee Cake recipe. The dense, yet moist and rich cake is what will give this delicious no-churn ice a unique flavor.

I love everything about carrot cake. It makes me think of spring and Easter. I mean, you can honestly enjoy it year-round but it’s always something I think of when the weather starts to warm up.

Tips for making Carrot Cake Ice Cream:

This one is a no-brainer, but you will obviously want to premake this delicious Carrot Coffee Cake (link) and allow it to cool completely.

I used my stand mixer to combine all of the ice cream ingredients but you could always use a hand mixer instead. Keep in mind you might need to mix it for a few extra minutes for the heavy cream to turn into stiff peaks. Just make sure you don’t over mix it.

Cover and freeze the ice cream for at least 6 hours before enjoying it. No one wants to eat mushy ice cream.

Ingredients

  • 2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 14oz can sweetened condensed milk
  • ½ cup crumbled carrot cake
  • ¼ cup crushed pecans
  • ¼ cup sweetened
  • coconut flakes

Instructions

  1. Pour the heavy whipping cream into the bowl of a stand mixer fitted with the whisk attachment. Beat the cream on medium-high speed until thick and creamy, around five minutes.
  2. Add the vanilla extract and mix to combine.
  3. Turn the mixer on medium-high speed and add the sweetened condensed milk in a steady stream. Beat until stiff peaks begin to form, being careful not to over mix the ingredients.
  4. Add the carrot cake, pecans, and coconut flakes. Stir to combine.
  5. Spread mixture into a large loaf pan. Cover with plastic wrap and freeze for six to eight hour before serving.
