Tips for making Carrot Cake Ice Cream:
This one is a no-brainer, but you will obviously want to premake this delicious Carrot Coffee Cake (link) and allow it to cool completely.
I used my stand mixer to combine all of the ice cream ingredients but you could always use a hand mixer instead. Keep in mind you might need to mix it for a few extra minutes for the heavy cream to turn into stiff peaks. Just make sure you don’t over mix it.
Cover and freeze the ice cream for at least 6 hours before enjoying it. No one wants to eat mushy ice cream.

- Pour the heavy whipping cream into the bowl of a stand mixer fitted with the whisk attachment. Beat the cream on medium-high speed until thick and creamy, around five minutes.
