This Hamburger Soup in the Slow Cooker is a favorite of over 50 ground beef recipes in my arsenal of yummy belly fillers! You can adapt the ingredients to better fit your family.  

At Miller Manor, we always have a house full of people and that means we always have a ton of mouths to feed and it’s homestyle recipe like this slow cooker hamburger soup are a family favorite that make enough to go around to feed our whole army–and have some leftovers.

Plus, this is just a ridiculously versatile slow cooker hamburger meat recipe. It’s one of my favorite quick and easy beef recipes.

If you prefer it hot, add 1/2 teaspoon of chilies! Don’t like green beans? Leave them out! Prefer to make it lighter, use ground turkey.

It’s literally not going to change how wonderful this slow cooker hamburger soup recipe turns out.

Plus, it’s great when you need to pivot your meal plan for the week. I can make this crockpot hamburger soup recipe pretty much any day as all of the ingredients are things we keep on hand–and I know that it’s a solid recipe the family loves.

And, again, if we’re out of peas, it’s OK–we just leave ’em out and move on. Because this hamburger and vegetable soup is so perfect. Simple recipes for the win!

How to Make Slow Cooker Hamburger Soup

I like to brown all my ground beef in my cast iron skillet–that way the family is all getting a little bit of iron in our diet. And I know that makes this recipe just a tiny bit more cumbersome than a dump-and-go recipe, it’s definitely worth the time.

You can just pop the meat in the skillet while you’re getting the kids ready for school, then it’s done browning when they’re done. Then, you can get them to help me dump all the other ingredients into the slow cooker as you’re walking out the door.

I know that seems a little silly, but including kids in cooking can not only make them more interested in the food they eat (and thus eat a little more and more diverse foods), but it also teaches them some very valuable life lessons, right?!

Ok. Now to make this awesome fall soup recipe. You’ll start, like I said by browning your beef, onions and garlic over medium high heat until cooked all the way through. Then drain and add 1/2 cup of flour and mix. This is going to make a little roux that kind of helps the stew thicken, but we’ll add more roux later, so don’t panic if it seems a little thin now.

To crock pot add:

  • Beef mix you just browned
  • Onion soup mix
  • Salad dressing mix
  • Pepper
  • Season salt
  • Beef broth & chicken broth
  • Water
  • Tomatoes
  • Tomato sauce
  • Celery
  • Carrots
  • Italian seasoning
  • Soy sauce

Stir it all up, then cover and cook for 8 hours. I love this because you can just put it on, head out, then come back after a long day at the office and dinner is ready without any pause. If only all meals could be so well-coordinated, right?!

When you’re about ready to serve dinner, in a small saucepan, make your roux by melting your butter on low and adding 4 tablespoons of flour. Stir this until it’s smooth then simply add to crock pot.

Then add 1/4 cup parmesan to crock pot. This is the best part.

Then it’s time to serve! Yum!

Now, keep in mind that you can absolutely make this with frozen vegetables or canned–or fresh veggies. There’s no need to do any pre-cooking, since this is all slow cooked and will have plenty of time to get even the freshest veggies cooked all the way through.

That’s one of the best things about this recipe, honestly, it’s just so hands-off. You can literally just spend 10 minutes in the morning browning the meat and loading the crockpot, then come back at the end of the day and dinner is ready to go.

It’s like the perfect “I know I’m going to have a long day” meal.

I am not particular when it comes to crock pots, honestly. I’ve never had one that didn’t work just like any other. That’s kind of the beautiful thing about them–they’re just a steady kitchen appliance. But I will say that having a liner can definitely come in handy, no matter what crockpot you’re using.

The liners just make clean-up so much more easy. Not that I don’t still have to wash my slow cooker, mind you, but I don’t feel like I have to spend a half hour scrubbing it if something gets dried-on.

Just slide the liner out and you’re ready to wipe it down!

I’ll be honest, though, I sometimes just serve this stew all by itself without any of the extras. Because it’s so simple, but so rich, it’s kind of a meal all in and of itself.

But it’s also so super warm and filling, it’s perfect if someone in the house is feeling under the weather. All that warm vegetable soup and the hearty hamburger will pull them right to the table for a bite.

Hamburger Soup in the Slow Cooker

Simple, comfort food that you can throw in the slow cooker first thing in the morning and have it ready for you at dinner-time!

Ingredients

  • 2 lbs ground beef
  • 1 medium onion, diced
  • 1 teaspoon chopped garlic
  • 1 ounce dry onion soup mix, 1 envelope
  • 1 ounce Ranch salad dressing mix, 1 envelope
  • 1 ⁄2 teaspoon pepper
  • 1 ⁄2 teaspoon season salt
  • 28 ounces beef broth, 2 cans
  • 28 ounces chicken broth, 2 cans
  • 2 cups water
  • 8 ounces diced tomatoes, undrained
  • 16 ounces tomato sauce, 2 cans
  • 1 Tablespoon soy sauce
  • 1 1/2 cups celery, slices
  • 1 1/2 cups carrot, slices
  • 1 14 ounce can of cut green beans
  • 1 14 ounce can of sweet golden corn
  • 8 Tablespoons butter
  • 1 ⁄2 cup flour + 4 Tablespoons flour
  • 1 ⁄2 teaspoon Italian seasoning
  • 1 ⁄2 cup grated parmesan cheese

Instructions

  1. Brown beef, onions and garlic. Drain, and add 1/2 cup of flour and mix.
  2. To crockpot add: beef mix, onion soup mix, salad dressing mix, pepper, season salt, beef & chicken broth, water, vegetables, tomato sauce, Italian seasoning, and soy sauce.
  3. Cook for 8 hours.

    This soup really hits the spot on them cool, winter days and even good during the Summer / Fall months. It’s just hubby and myself and sometimes I will make extra, put in freezer containers and have for another day.

    I do use ground beef and mild Italian Sausage along with a bag of frozen mixed veggies, veggie broth and if I don’t have any broth on hand then will use original V-8 juice. Maybe at times a can of mild Ro-Tel.
    Mostly I add in what I have on hand. Quick, easy, and OH, So Delicious!
