Homemade S’mores Brownies

Seriously the best mash-up of marshmallow graham cracker brownies ever made. If that’s even a thing. But it is. Because I am doing it. Ha!

Back to the homemade smores brownies, though. They’re just amazing, huh? All that gooey marshmallow on top of that amazingly thick and chewy brownie.
My mouth is watering, just thinking about biting into that amazing confection of chocolatey goodness. Whew!
How Do You Make Homemade Brownie Smores?
The first thing I like to do is get all of my ingredients out on the counter. Because I often get the kids involved, this step all by itself can be kind of a symphony all it’s own. But then, when everything is out, I know I won’t forget to put anything in.
Then it’s time to preheat oven to 350 degrees and get your baking pan with foil ready, if that’s what you’re doing. If you have a non-stick pan, you can just spray it with some cooking spray and you’re good to go.
Once that’s ready, I get my melted butter going in the microwave while I put all the other ingredients for the brownie batter into a medium bowl.
I keep the kids busy crushing graham cracker pieces to their liking while I mix the brownie batter up. And, sometimes, if we’re out of chocolate chips, I have them break up chocolate bars and heat it in the microwave so we can spread melted chocolate over the brownies instead of dropping chips on top with the toasted marshmallows. But that’s only if we’re out of chocolate chips. You certainly don’t have to do all that.
After the brownies are nice and crisp on the edges, I remove from oven, then I’m ready for the fun part!
Although the pan is hot, I usually allow the older kiddos to help me drop the chocolate chips, and top with marshmallows then graham cracker crumbs on top of it all. Because, you know, they’re smart enough to not touch the pan, if you let them know it’s hot, most of the time.
Then it’s back in the oven for that last few minutes just to get the marshmallows nice and toasted a soft golden brown.

Cooled and cut, these amazing smores brownies are definitely the treat I’ve been wanting all summer long.

Homemade S'mores Brownies
Start the yum-machine with these Homemade S'mores Brownies, a fun twist on smores and brownies. And a whole lotta fun!
Ingredients
Brownies
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/3 cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon baking powder
- ¼ teaspoon salt
S'mores Layer
- 3/4 cup graham crackers, crumbled
- 3/4 cup mini marshmallows
- ½ cup chocolate chips
Instructions
- Preheat oven to 350.
- Cream the butter, adding in sugar and then the sugar and vanilla until well mixed.
- Mix in the cocoa powder, flour, baking powder and salt until smooth.
- Line a 8x8 baking pan with parchment paper and lightly spray the paper. Spread out brownie batter.
- Bake for 25-30 minutes until set.
- Remove from oven and immediately spread chocolate chips on top, followed by a mix of marshmallows and graham crackers.
- Return to the oven for 5 minutes or until the marshmallows are browned.
- Remove from oven and let cool before lifting the parchment paper from the pan and slicing the brownies.
