The mint and chocolate mixture of these brownies is what keeps me coming back for more. I literally grab two brownies from the pan every time I make them.

There’s just something about taking that first bite of brownies after they cool completely. The texture is literally perfection at that exact moment in time. After you add the eggs and cocoa powder and the rest of the simple ingredients and bake the brownies, you’ll get to put up your feet and enjoy the reward of your hard work.

My boys are pretty crazy about brownies so they love to be in the kitchen and help create these as well. It’s a family effort to make them as quick as we can so we can eat them quickly, too!

How do you know when brownies are done baking?

The middle of the brownies should be firm and the edges against the pan should start to pull away a bit. You can also have a toothpick inserted once the pan is done baking to see if it will come out clean.

If it’s clean, they’re done and need to start the cool-down process.

Fudgy Andes Mint Brownies Recipe

This brownie recipe is one that you're going to love making and sharing with family and friends!

Ingredients

  • 1/2 cup of melted butter
  • 1 cup of sugar
  • 2 eggs
  • 1 tsp of vanilla extract
  • 1/3 cup of cocoa powder
  • 1/2 cup of flour
  • 1 tsp of salt
  • 1 tsp of baking powder
  • 1 cup of Andes mints

Ganache Ingredients:

  • 1/3 cup of milk
  • 1/3 cup of butter
  • 1 1/4 cup of sugar
  • 1 tsp of vanilla extract
  • 1 cup of chocolate chips

Instructions

Start by preheating the oven to 350 degrees. Line and grease a 9X9 baking dish.

Mix the sugar and butter until fluffy.

Add in the vanilla and the eggs and mix.

Use a different bowl and mix in the flour, cocoa powder, salt, and baking powder. Stir.

Add 1/2 of the dry mixture into the butter and sugar bow and mix. Then add the rest and mix.

Fold in 1 cup of the Andes mints and then put the mix into the baking dish.

Bake for 25-30 minutes. The center should be firm and the edges pull away from the pan.

Put milk, sugar, and butter into a saucepan on the stove over medium heat.

Stir until melted.

Add in the vanilla and chocolate chips and stir.

Take off the heat and pour it over the top of the brownies.

Sprinkle with Andes mints and let set before serving.
