Once you preheat the oven to 350 degrees, the fun of cooking baking has started! It’s just so relaxing to make the flour mixture, add the baking chips, and make the dough balls to put on the baking mat to bake. Baking in the kitchen is one of the most relaxing activities that I love to do.

My boys love when I bake as well because they get to enjoy the flavors! They get a little impatient with the whole “cooling completely” part of the cookie recipe but I don’t want them to burn their mouths!

To get the butter smooth and creamy, you just need to get it to room temperature. That way it’ll cream up nice and easily when you’re using the stand mixer or electric mixer to make the dough.

Soft Andes Mint Cookies Recipe

This simple cookie recipe is one of the best mint cookies you'll ever made!

Ingredients

  • 1 ½ cups of flour
  • 1 tsp of baking soda
  • 1 tsp of cornstarch
  • ¼ tsp of salt
  • ½ cup of room temperature butter
  • ¼ cup of brown sugar
  • ½ cup of sugar
  • 1 egg
  • 1 cup of chopped up Andes mints
  • ½ cup of mini chocolate chips
  • Green food coloring

Instructions

  1. Start by preheating the oven to 350 degrees. Add parchment paper to a baking sheet.
  2. Whisk flour, cornstarch, baking soda, and salt in a bowl and set it aside.
  3. In a different bowl, beat the brown sugar, butter, and sugar until fluffy.
  4. Add in the green food coloring and the egg and mix.
  5. Pour the dry mixture into the wet and mix.
  6. Fold in the chopped-up Andes mints and the chocolate chips. Leave a small amount out to add to the top of the cookies.
  7. Scoop a tablespoon size of the cookie dough and hand roll it into a ball. Put on a lined cookie sheet and leave them with about 2 inches in between.
  8. Press the cookies down to flatten a bit and then add the candy on top. Slightly press down so that it sticks.
  9. Pop in the oven and bake for 8-10 minutes. Remove and let cool for 5 minutes on the baking sheet then move to finish cooling on a wire rack.
