Gluten Free Mint Chocolate Chip Cupcakes
These Mint Chocolate Chip Cupcakes are so delicious that no one will know that it is one of our favorite easy cake mix recipes!
That’s right, the cupcakes I’m about to show you come from a box. Shh… don’t tell anyone! Be certain to check out our cupcake recipes as well!
You see, no one is going to be able to tell that you didn’t make these from scratch and you don’t even have to tell anyone. In fact, when your family starts calling the famous cupcakes that you make, we will let it be our secret that the contents come from a box. No judging here. I am going to show you how to take a box of cake and turn it into a pin worthy showcase that the whole family can crave.
When creating a new cake mix recipe I always look into my pantry and ask myself what meets the following criteria:
- Easy
- Quick
- Cheap
- Impressive
- Amazing Flavor
That’s how I came up with these yummy cupcakes that remind me of my childhood, my daddy’s favorite ice cream flavor is mint chocolate chip so these little cakes take me back to the days of being a kid again. By the way, they were a huge hit with my kids! Easy recipes are the best!
The cake mix I used was a gluten free chocolate cake, you can use a regular box of chocolate cake, but gluten is an issue for my son and I. Don’t worry, no one will miss the gluten if you do decide to go gluten free for this.
Mix the cake according to the direction on the box. Before you pour your mixture into the cupcake liners and lick the bowl clean you will need to mix in 1 tsp of mint flavoring. This will get rid of that “box flavor” and add a subtle hint of flavor that leaves your family saying “how did you do that?”.
Next bake the cupcakes according to the instructions on the box until cooked all the way though and set them aside to cool. I told you this dessert recipe was easy!
For the frosting you are going to use your favorite buttercream. You can use something from the grocery store, but we are going to change the dynamics of the frosting a bit so you may need to buy extra if you don’t want to get creative with the measurements of a homemade buttercream.
Okay, once you have your favorite frosting you are going to add 2-3 drops of green food coloring to give it that nice cool mint shade. Mix in 1/4 cup of Andes mint baking chips.
Then just layer the frosting onto the cupcakes, sprinkle on some more mints and you are on your way to that fancy holiday party!
As a mom of two kids under three, I know that holiday parties can be a chore, to say the least. I love getting together with the whole family and I used to love the endless days of baking. Now, finding time to bake can be a hassle and I don’t even want to attempt a dish that might end in an epic fail. I just don’t have the time to focus on each individual step or even think about the instructions.
