You’re really going to love this Strawberry Soda Cupcake Recipe. The cupcake batter is fast and easy to make and it has such an awesome flavor, too. The added soda is just such a fun ingredient and gives it that little extra kick. Make certain to check out our other cupcake recipes, too!

This is one unique cupcake recipe that everyone will crave. Pair it up with some delicious homemade lemonade or just let the cupcakes be the star of the show.

Make certain that you let the cupcakes get to room temperature before you add on the frosting. Otherwise it’s all going to melt off and you’ll have to start all over again.

Strawberry Soda Cupcake Recipe

Once you preheat the oven to 350, the recipe making has started! I love to cook in the kitchen but will take help any day. If someone wants to hop in and help with the mixing or adding the frosting to the piping bag, I’m all about letting that process happen!

My boys love cupcakes because it’s a simple dessert that they can grab and go as they’re running out of the house. I’m all about cupcakes because it’s a simple recipe that helps with portion control. It’s a win-win!

Why is my strawberry buttercream frosting thin?

You might have added in too much liquid when making the frosting. If the texture isn’t light and fluffy, it’s not exactly right.

Just add in a bit more sugar and keep stirring to get the frosting consistency that you’re looking for.

How do you know when cupcakes are done baking?

The best way to to have a toothpick inserted to find out. If the toothpick inserted into the center comes out clean, this is your biggest clue that these cupcakes are done baking and ready to be pulled from the oven.

Strawberry Soda Cupcake Recipe

Total Time: 35 minutes

This cupcake recipe is so simple and easy to make!

Ingredients

Cupcake Ingredients:

  • 1 boxed cake mix
  • 1/2 cup of water
  • ½ cup of strawberry soda
  • 1/3 cup of avocado oil
  • 3 eggs
  • 1 cup fresh strawberries (can be optional)
  • Red sanding sugar

Frosting Ingredients

  • 2 sticks room temp unsalted butter
  • 4 cups powdered sugar
  • 1/4 cup of half and half
  • 1/4 cup of strawberry soda
  • 1 teaspoon of strawberry extract
  • 1 tablespoon of red sanding sugar
  • 6 straws

Instructions

To make the cupcakes:

Preheat the oven to 350 degrees. Add cupcake liners to your baking pan.

Grab a large bowl and mix the oil, water, eggs, and strawberry soda with the cake mix. Mix on low for 1 minute and then on medium for 1 more minute.

Put the mixture into the cupcake liners so it's 2/3 full.

Put in the oven and bake for 18-20 minutes until done. Let them cool

To make the frosting:

Beat the butter and sugar for 1 minute.

Add in the soda and the extract and beat until fluffy and light.

Mix in the sanding sugar.

Put the frosting into a piping bag and decorate the top of the cupcakes. Top with more sanding sugar if desired.

Cut the straw in half and stick it into the cupcake.
