Why is my strawberry buttercream frosting thin?
You might have added in too much liquid when making the frosting. If the texture isn’t light and fluffy, it’s not exactly right.
Just add in a bit more sugar and keep stirring to get the frosting consistency that you’re looking for.

How do you know when cupcakes are done baking?
The best way to to have a toothpick inserted to find out. If the toothpick inserted into the center comes out clean, this is your biggest clue that these cupcakes are done baking and ready to be pulled from the oven.

Strawberry Soda Cupcake Recipe
Ingredients
Cupcake Ingredients:
- 1 boxed cake mix
- ½ Cup(s) of water
- ½ Cup(s) of strawberry soda
- ⅓ Cup(s) of avocado oil
- 3 eggs
- 1 Cup(s) fresh strawberries can be optional
- Red sanding sugar
Frosting Ingredients
- 2 sticks room temp unsalted butter
- 4 Cup(s) powdered sugar
- ¼ Cup(s) of half and half
- ¼ Cup(s) of strawberry soda
- 1 teaspoon of strawberry extract
- 1 tablespoon of red sanding sugar
- 6 straws
Instructions
To make the cupcakes:
- Preheat the oven to 350 degrees. Add cupcake liners to your baking pan.
- Grab a large bowl and mix the oil, water, eggs, and strawberry soda with the cake mix. Mix on low for 1 minute and then on medium for 1 more minute.
- Put the mixture into the cupcake liners so it’s 2/3 full.
- Put in the oven and bake for 18-20 minutes until done. Let them cool
To make the frosting:
- Beat the butter and sugar for 1 minute.
- Add in the soda and the extract and beat until fluffy and light.
- Mix in the sanding sugar.
- Put the frosting into a piping bag and decorate the top of the cupcakes. Top with more sanding sugar if desired.
- Cut the straw in half and stick it into the cupcake.
