Ingredients
• 2 pounds of London broil
or steak of choice
• 1/8 cup of Canola oil
• 1 t of Italian seasoning
• 1 t of garlic powder
• 1/2 cup of grated parmesan cheese
• 6 ounces of Mushrooms
sliced
• 8 cups of Beef broth or stock
• 6 cups of small red potatoes
quartered
• 1/2 t of Pepper
• 1/4 t of Salt
• 1 Yellow onion
diced
• 2 cups of Baby carrots
• 1/8 t of dried thyme
• 1 t of Dried basil
• 2 stalks Celery
diced
Instructions
Put the Instant Pot on saute mode and add in oil, Italian seasoning, and garlic powder.
Saute the steak in the Instant Pot and cut it into small pieces.
Add in 1 cup of beef broth to deglaze and stir.
Put in the rest of the beef broth plus the potatoes, carrots, onions, celery, and remaining spices.
Put the pressure on high and set for 4 minutes. Once the time is up, manually release the pressure.
Add the mushrooms, parmesan cheese, and steak if not still in the pot.
Let rest for 1/2 hour then serve.
