That means less for me to dish and portion out – and I will count that as a win!
Mini Meatloaf Bites Recipe
Making meatloaf in a muffin tin pan might sound unique, but trust me when I say it’s a breeze. Once you make them, you just might be hooked.
I always top my baked meatloaf with ketchup, but some add BBQ sauce and mustard. I say add what you want to add and enjoy the flavor!
If you want to take this simple recipe up a notch, make a double batch and freeze them. When you’re ready to eat, take them out of the freezer, reheat, and enjoy!

Why is my meatloaf dry?
Firstly, selecting lean meats without sufficient fat content can cause the meatloaf to lose moisture as it cooks. Secondly, overmixing the ingredients can lead to a dense and dry texture.
Additionally, not adding enough wet ingredients like eggs, ketchup, or even grated vegetables, which help to lock in the moisture, can result in a drier loaf.
Furthermore, cooking meatloaf at a high temperature for too long will evaporate the juices, making it moist and tender. To avoid this, it’s crucial to use a meat thermometer to cook the meatloaf to the recommended internal temperature of 160°F, ensuring it remains juicy while safely cooked.

Optimal mixing should combine ingredients until they are just integrated. This ensures the meat retains its natural texture and moisture, allowing for a juicy and tender meatloaf once cooked.
Overmixing also risks emulsifying the fats too much, further contributing to a heavy, greasy feeling rather than the light and flavorful experience most seek in a meatloaf.

Mini Meatloaf Bites Recipe

Ingredients
Mini Meatloaf Ingredients:
- 1 pound lean ground beef
- ½ teaspoon dried parsley flakes
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 finely chopped small onion
- 2 Clove(s) of minced garlic
- ¼ Cup(s) ketchup plus 2 tablespoons to add later to the top
- 1 tablespoon Worcestershire sauce
- ⅓ Cup(s) cornmeal
- 1 egg
BBQ Meatballs Ingredients:
- 2 pounds of ground beef
- 1 tsp. Italian Seasoning I use Mrs. Dash
- 1 egg slightly beaten
- ½ Cup(s) bread crumbs I use Italian flavor
- ½ Cup(s) Ketchup
- Salt and Pepper to taste
BBQ Meatballs Sauce Ingredients:
- 1 Cup(s) Ketchup
- 1 TBS Mustard
- 1 TBS Worcestershire
- 2 TBS brown sugar
- salt and pepper to taste
Instructions
- Mini Meatloaf Bites
- Preheat the oven to 375 degrees. Add non-stick cooking spray to the muffin pan.
- Mix all the ingredients in a large mixing bowl. Use your hands to mix well. Separate the meat mixture into six balls of the same size.
- Put the balls in the individual muffin cups and press the meat mixture down in the cup.
- Add a bit of ketchup to each one, and place the muffin pan in the oven.
- Bake for 30 minutes to fully cook the meatloaf.
BBQ Meatballs:
- Mix meat ingredients together, shape into 1-inch balls, and place in baking dish.
- Mix sauce ingredients and pour over meatballs.
- Bake at 350 degrees for about an hour, basting occasionally
