This Black Bean and Sweet Potato Soup Recipe is a simple and hearty soup with vegetables that are certain to warm your bellies fast. I love making easy soup recipes during the year and this is one of my favorites that tops the list.

Grab some really cool soup bowls and let everyone fill them to the top! I’ve seen a lentil soup recipe that is close to this one before that was made in the slow cooker but I’m a fan of cooking this on the stove and using a dutch oven or large pot instead.

Make certain that when you’re heating up your olive oil, you make it hot enough so that it can easily saute the veggies. You’re going to want them translucent but not overly cooked or they’re going to turn to mush.

I’ve been making this simple soup recipe for years for my boys and they still love and crave it now. I think it’s the sweetness of the potatoes with the heartiness of the rest of the added veggies that keeps bringing them back and wanting more.

Can you freeze soup for later?

You can add in in any type of vegetables that you want. I love adding in white beans as well and also I’ve been known to add in meat from time to time too which instantly turns this into a hearty vegetable beef soup as well.

Ingredients
  

  • 2 Tablespoons of olive oil
  • 1 small diced red onion
  • 1 diced green bell pepper
  • 1 diced red bell pepper
  • Salt and black pepper
  • ½ teaspoon crushed red pepper flakes
  • 1 Tablespoon of ground cumin
  • 2 teaspoons of chili powder
  • ½ teaspoon dried oregano
  • 2 cubed and peeled sweet potatoes
  • 3 Tablespoons of tomato paste
  • 2 15- ounce. can black beans rinsed and drained
  • 3 Cup(s) of vegetable broth
  • 1 Cup(s) of frozen corn
  • ¼ Cup(s) of chopped fresh cilantro
  • 2 Tablespoons of fresh lemon juice

Instructions
 

  • Put the olive oil into a large pot and heat over medium heat. Add in the onion and peppers. Stir until they are soft and fragrant, about 4-5 minutes.
  • Add in your red pepper, cumin, chili powder, and dried oregano. Cook and stir for about 1-2 minutes.
  • Put in the sweet potatoes, tomato paste, and black beans. Stir. Put in the vegetable broth and change the heat to medium-high heat. Let boil, then reduce to medium-low heat. Cover with a lid and simmer for 15-20 minutes.
  • Add in the cilantro, corn, and lemon juice. Enjoy!
