It’s amazing how a few simple ingredients can create a taste and texture that I crave literally all the time. If you’re looking for a simple dessert recipe, there’s nothing better than this sweet, sweet taste.

This is one of my favorite dessert bread recipes to make!

Forget loaf pans, this bread is meant to be made in a pan. Not only does the dry ingredients pair perfectly with the wet ingredients but the cooking technique creates an amazing texture, too.

With the added blueberries sinking to the bottom, you’re going to want to do what you can to add to the small bowl, whisk, and then prep to place into the prepared pan.

You’re also going to want to cover the dough with plastic wrap to give it time to raise. It gets almost double the size which is pretty cool to see.

My boys love this recipe because it’s airy and light. It’s also loaded down with flavor and they can’t get enough of the sweet lemon glaze. This recipe always gets eaten quite quickly, and you’ll soon find out why!

If you don’t want to make the glaze, adding on powdered sugar is totally fine as well. You can’t go wrong with anything, really!

Can you use frozen blueberries in this recipe instead of fresh blueberries?

Use fresh if at all possible. Frozen blueberries will release liquid and it will really affect the outcome of the bread.

If the bread has too much liquid, it’s not going to cook very well and will possibly fall apart while it’s cooling on the wire rack.

Lemon Blueberry Swirl Bread Recipe

Prep Time: 30 minutes
Cook Time: 35 minutes
Total Time: 1 hour 5 minutes

This simple bread recipe is going to be unlike anything you've ever tried!

Ingredients

  • ⦁ ⅔ cups of warm milk 
  • ⦁ 1 T granulated sugar
  • ⦁ 1 packet of dry yeast
  • ⦁ 2¾ - 3 cups of all-purpose flour
  • ⦁ ¼ cup of melted butter
  • ⦁ 2 room temp eggs 
  • ⦁ ¾ t of salt
  • ⦁ 1⅔ cup of blueberry jam
  • ⦁ 1½ cup of fresh blueberries
  • ⦁ 2 T lemon zest
  • ⦁ 1 cup of powdered sugar
  • ⦁ 3 T lemon juice

Instructions

Put the yeast and sugar in warm milk and dissolve, then stir. Let it sit for 10 minutes. The yeast should foam up.

Add the paddle attachment to your mixer and mix in one cup of flour. Put in the butter and one more cup of flour. Mix.

Put in the eggs, the rest of the flour, and the salt and mix.

Form the dough into a ball and put it into a greased bowl. Turning to grease the top. Cover with plastic wrap for 1 hour.

Preheat the oven to 350 degrees.

Take the dough and put it on a floured surface then roll it out to a 18X15 rectangle. Spread on blueberry jam and top with blueberries. Sprinkle with lemon zest.

Roll starting at the long end but don't make it too tight. Pinch the seam to seal and then turn it seam side down.

Slice lengthwise to make two pieces. Twist each piece around each other and keep the side that is cut, up. Spray a cast iron skillet with cooking spray and put the dough in the pan, tucking the ends under.

Put in the oven and bake for 35 minutes at 350 degrees.

Take out the bread and let it cool in the pan.

Mix the lemon juice and powdered sugar and drizzle on the top.
