As most of you know by now, I’m a huge fan of using cake mix to make desserts. This is because I love having the ease of the ingredients without having to measure out all the extra stuff. Plus, using a cake mix is a fast and simple approach!

These cupcakes have the best light color to them, which also makes them funky and fun. They’d be perfect for a birthday party, pool party, or even a fun baby shower theme!

What happens when you overbake cupcakes?

When baking cupcakes, it is important to keep a close eye on them to prevent overbaking. Overbaking can result in dry and tough cupcakes with a burnt taste.

The longer cupcakes are in the oven, the more moisture they lose, which leads to a less desirable texture.

Additionally, the sugar and other ingredients in the cupcakes can caramelize and turn brown, giving them an unappealing appearance.

Ingredients
  

  • 1 box of white cake mix
  • 1 ¼ Cup(s) lemon lime soda
  • Cup(s) vegetable oil
  • 4 large egg whites

Frosting Ingredients:

  • 2 sticks of softened salted butter
  • 2 tablespoons lemon jello
  • 2 tablespoons lime jello
  • 4 Cup(s) powdered sugar
  • 3 tablespoons half and half
  • Green and yellow gel food coloring

Instructions
 

  • Start by preheating the oven to 350 degrees. Add the cupcake liners to a cupcake pan.
  • Add the cake mix to a mixing bowl and mix in the soda, oil, and eggs on medium speed until mixed well.
  • Add the cupcake batter into the liners about 2/3 full. Bake for 20 minutes or until a toothpick comes out clean. Let the cupcakes cool before frosting.
  • Cream the butter for about 2 minutes to make the frosting until light and fluffy.
  • Slowly mix in the powdered sugar 1 cup at a time while adding the half and half or milk a little between each cup. Mix for 1 minute until it is creamy.
  • Evenly separate the frosting into two mixing bowls. In one bowl, add the lemon jello and yellow food coloring and in the other bowl add the lime jello and green food coloring.
  • Fill one of the piping bags with the yellow frosting and one with the green.
  • Put the two small piping bags into a larger piping bag and then squeeze out a bit so that the frosting is flowing.
  • Frost the cupcakes.
