This French Vanilla Funfetti Cupcakes Recipe is the best! You'll love using a boxed cake mix!

Ingredients

  • 1 box of yellow cake mix
  • 1 cup water
  • 2/3 cup milk, divided
  • 1/3 cup pure canola or coconut oil
  • 3 large eggs
  • 1- 3.4ounce box of French Vanilla Instant Pudding, divided
  • Sprinkles

Frosting Ingredients:

  • 2 cups of softened salted butter
  • 1- 3.4ounce box of French Vanilla Instant Pudding, divided
  • 4 ounces of softened cream cheese
  • 2/3 cup milk, divided
  • 3 tablespoons half and half (you may or may not need)
  • 4 cups powdered sugar

Instructions

  1. Preheat the oven to 350 degrees. Line a cupcake pan with the cupcake liners.
  2. Add the cake mix, half of the pudding, and 1/3 cup of milk to a large mixing bowl.
  3. Add the water, eggs, and oil and mix on medium speed using a hand mixer.
  4. Add the cupcake batter into the liners, 2/3 full. Put the pan in the oven and bake for 18-20 minutes or until an inserted toothpick comes out clean. Let the cupcakes cool down all the way.
  5. To make the frosting, mix the rest of the pudding and milk in a bowl.
  6. In a different bowl, cream the cream cheese and the butter until light and fluffy.
  7. Stir in the pudding/milk mixture.
  8. Slowly add the powdered sugar 1 cup at a time until it is nice and creamy and peaks form. Add 1-3 tablespoons of the half and half between the cups of powdered sugar as needed.
  9. Add the frosting into a piping bag and frost the cooled cupcakes. Add the sprinkles!
