Leftover Soup

This is a meal that I look forward to having every few months or so.  It is the easiest thing in the world and so yummy.  Plus, it is NEVER the same AND saves you so much money!

I have one of those plastic 1 gallon ice cream tubs.. you know, the ones you typically buy for birthday parties?  Well, I keep it in the freezer and when we make things and have a small amount left over, I am them to that bucket.

Things like:

  • Spaghetti
  • Chili
  • Manwich
  • Veggies
  • Meat Drippings
  • Gravy
  • Pretty much all meats (meatloaf, chicken, pork chops, roast, etc)
  • Pretty much all veggies (corn, asparagus, beans, etc)

Basically if it doesn’t have pasta, potatoes, or cheese made with it, I add it to the soup dish.

When the bucket gets full or close to full I defrost it, add it to a big pot and make soup.  Sometimes, depending on what I have fill my bucket with, I need to add any combination of the following:

  • tomato sauce
  • beef broth
  • Potatoes
  • Kidney, red, chili, great northern beans
  • field or sweet peas
  • Orzo noodles

This sounds great. I’m definitely going to try it. Only problem, we often don’t have leftovers. I guess we will have to start making a little more of everything 🙂

My mom did this. It was always the best soup and different every time. I like saving chicken wing tips, necks and gizzards to make chicken stock.
