Easy Instant Pot Meatloaf Recipe

This Instant Pot Meatloaf Recipe is a great way to make a hearty meal fast. Forget the need for molding the meat into a shape on a baking sheet or using your air fryer and get your Instant Pot ready instead.

Meatloaf is one of my go-to dinners because it’s full of flavors that we all love to eat! Since I can easily make this for a simple meal, I tend to have it rotating on my meal plan at least once a month.

All you need to do is pair this with a side salad or some steamed veggies and you’ve got the perfect meal in a short amount of time.

Instant Pot Meatloaf Recipe

Making meatloaf isn’t hard as it’s just a lot of putting ingredients in a bowl to combine them well. The hardest part for me is to be patient enough for it to cool down a bit so that I can eat and enjoy it!

The boys in our house really like this meatloaf recipe and I’ll take that as a win. I’ve been making this in our Instant Pot for quite some time and it really does turn out perfectly every time I make it. For me, that’s a sign of a great recipe when it does what it’s supposed to AND it gets eaten up by everyone as well.

What are the most common meatloaf ingredients?

This is where it gets interesting. Everyone tends to make meatloaf their own way which is what makes every bite different. Some people add brown sugar to their meatloaf, but I’m more of a fan of adding less sweet ingredients and letting the lean ground beef and seasoning be the star of the show.

I also like adding ketchup and mustard on top but I’ve heard that some people add BBQ sauce as well.

How do you know the meatloaf is finished cooking?

You really just need to focus on getting the beef cooked all the way through. Cooking in the Instant Pot means that the time that you cook meatloaf is pretty much going to be a good sign that it’s done and ready to be served.

Always verify the cooking time for the meatloaf to ensure that you give it the full time to cook.

Instant Pot Meatloaf Recipe

Yield: 6-8 servings
Prep Time: 10 minutes
Cook Time: 25 minutes
Broil Time: 6 minutes
Total Time: 41 minutes

Look no further. Making meatloaf in your Instant Pot is seriously the best.

Ingredients

  • 2 lbs ground chuck
  • 2 eggs
  • 1 tsp dried oregano
  • 1 T worcestershire sauce
  • 2 tsp of dijon mustard
  • 1 cup of plain bread crumbs
  • 1 ½ tsp salt
  • ½ tsp black pepper
  • ½ cup of yogurt or sour cream
  • Mustard
  • Ketchup

Instructions

  1. Mix everything together well.
  2. Put the mixture into a 7.5-inch Springform pan.
  3. For the liner, add the recommended water amount to bring the pressure cooker to pressure. This will vary but it's usually 1 cup of 1 1/2 cups.
  4. Put a trivet into the pressure cooker liner and place the pan over the trivet.
  5. Seal the lid and set the valve to sealing. Turn to "manual" or "pressure cook" for 25 minutes. Once the cycle is done, let it have a 10-minute natural release before switching the valve to have a quick pressure release.
  6. Add the ketchup and mustard on top of the meatloaf and mix together on top.
  7. Take the springform pan out of the pressure cooker and put it on a baking sheet.
  8. Turn the oven to broil and put the pan under the broiler for about 6 minutes of time.
