Peppermint Mocha Cupcakes
The fun part about making these cupcakes is that you’re actually making the entire recipe from scratch. That’s homemade cupcakes AND homemade frosting, all in one simple recipe.
This means you’ll get to love and learn the process of making them, smelling them, and then enjoying every bite.
Since this recipe has a few moving parts to it, my boys tend to hop in and help make the cupcakes and frosting. I love that we spend this time together, and they love that they’re that much closer to the oven when the cupcakes are done baking.
How do I know when the cupcakes are done baking?
Knowing when cupcakes are done baking can be tricky, as it is easy to misjudge the baking time. As with all food items, the best way to ensure cupcakes are cooked is to check on them throughout the baking process.
A good indicator that a batch of cupcakes is almost done is if they begin to smell like cake and are just starting to turn golden brown around the edges.
Additionally, gently pressing a fingertip into one of the cupcakes will reveal whether it has finished baking; if the indentation quickly springs back up, they likely need more time in the oven.
A slight wobble may mean there is still residual heat, and they should be given a few extra minutes.
Lastly, inserting a toothpick or small knife into a cupcake can give a clearer indication of doneness; if any moist batter clings to the toothpick or knife after it’s been withdrawn, then your cupcakes still require more baking.

When cupcakes are still warm from the oven, the butter and sugar combination in the frosting will have difficulty adhering to the surface, resulting in a crumbly texture instead of a smooth and creamy one.

The Peppermint Mocha Cupcakes recipe is a festive holiday dessert that captures the flavor of a peppermint mocha in every bite. The moist vanilla cupcake base is infused with espresso, cocoa powder, and peppermint extract for a dynamic burst of flavor.
Ingredients
Cupcake ingredients
- 1 cup granulated sugar
- ½ cup of cooled coffee
- ½ cup vegetable oil
- 2 eggs
- 1 tbsp apple cider vinegar
- 1 ½ cups all-purpose flour
- 1/3 cup cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp peppermint extract
For the frosting
- ½ cup of softened butter
- 2 cups confectioners’ sugar
- 2 tbsp cocoa powder
- 1 ½ tbsp milk
- 12 peppermint candies
Instructions
- Preheat oven to 350 degrees F. Add liners to your cupcake pan.
- Mix the sugar, coffee, oil, eggs, and apple cider vinegar in a large bowl.
- Add flour, cocoa powder, baking soda, and salt and mix to make the batter.
- Add a few drops of the peppermint extract into the batter and stir.
- Fill the cupcake liners 2/3 the way full. Put in the oven and bake for 18 to 20 minutes. Let the cupcakes cool.
- To make the frosting, beat the butter, confectioners’ sugar, cocoa powder, and milk with a mixer.
- Once mixed, add it to a piping bag and frost the cupcakes.
- Add a peppermint on top.
