I think it’s safe to say that these chocolate cupcakes topped with homemade frosting and a peppermint probably already have your mouth drooling. I know mine is!

This is one of those holiday flavors that everyone is going to crave – including you! You can easily make these for a holiday party, or have them out to show off at the dessert table.

Peppermint Espresso Cupcakes

There’s just something special about making a cake from scratch. I like to use baking time as bonding time with the kids, as it gives us a chance to create something delicious together as well as spend that time talking, too. It’s amazing how baking opens up the lines of communication.

I have a split house when it comes to who likes to bake one. One likes to help with the cake batter and adding in the wet and dry ingredients, while the others prefer to create the homemade whipped frosting. (I think it’s because they like to lick the bowl after the frosting is made!)

My boys always have been dessert funs, but these cupcakes are one of their favorite treats. Anytime that I ask if they want to make these, they’re literally already on their way to the kitchen to start making sure that we have all the needed ingredients.

How do you thicken up frosting?

If the homemade frosting is a little too thin, or you just prefer it to have a thicker texture, you can easily thicken it up by adding in a tiny bit of powdered sugar.

I would start with just a tablespoon at a time and then stir to see what you think. If you make it too thick, you can alternate and add in a tablespoon of milk and stir to see if that helps.

Can I freeze baked cupcakes?

You bet! Baking cupcakes and then freezing them are a perfect way to meal prep. Just make sure that you let the cupcakes cool down all the way before adding them to a freezer bag or a freezer safe container.

It’s also important to know that you don’t want to freeze cupcakes that already have frosting on them. This will make them have a unique texture when they thaw so it’s better to just make new frosting and add when they’re thawed and ready to eat.

Thawing frozen cupcakes is really simple, too. Just move them to the fridge when you’re ready to eat them and they’ll thaw within a few hours of time.

Peppermint Espresso Cupcakes

Yield: 24 cupcakes
Prep Time: 15 minutes
Cook Time: 17 minutes
Total Time: 32 minutes

This recipe makes the perfect fluffy and delicious Peppermint Espresso Cupcakes!

Ingredients

  • 2 cups milk
  • 1 cup of cocoa powder
  • 6 tablespoons of espresso powder
  • 2 cups of flour
  • 1 ½ teaspoons of baking powder
  • ½ teaspoons of salt
  • 2 ¼ cups of sugar
  • ¼ cups of oil
  • 3 eggs
  • 1 teaspoon peppermint extract

Icing ingredients:

  • 2 cups of heavy whipping cream
  • 1 cup of powdered sugar
  • ½ cups of unsweetened cocoa powder
  • 1 teaspoon of peppermint extract

Instructions

  1. Preheat the oven to 350 degrees. Add cupcake liners to a cupcake pan.
  2. Heat the milk in a pan on medium heat. Once the milk simmers, whisk in the espresso powder and the cocoa powder until combined. Let it cool.
  3. Add the flour, baking powder, and salt to a bowl and whisk. Set it aside.
  4. Grab a different bowl and beat the oil and sugar together until combined. Add the peppermint extract and the eggs and beat them together.
  5. Add the cocoa mixture and beat until smooth.
  6. Add the batter to the cupcake liners and bake for 15-17 minutes.
  7. Let the cupcakes cool before adding any icing.

Icing

  1. To make the icing, add the whipping cream to a chilled bowl. Beat it on medium until peaks start forming.
  2. Whisk together the cocoa powder and the powdered sugar, and then add that mixture to the cream along with the peppermint extract. Beat until it thickens and forms peaks.
  3. Add the icing onto each cupcake and store in the fridge until serving time.
