If you want a fast and simple weeknight dinner, make this Parmesan Haddock Recipe!

Ingredients

  • 2 T. extra virgin olive oil, divided

  • 4 6-ounces fresh haddock filets

  • ¾ cup of freshly grated Parmesan cheese
  • 4 medium diced and seeded tomatoes
  • 2 cups of thinly sliced fresh basil leaves
  • Optional:
Sea salt and black pepper, to taste

Instructions

  1. Preheat the oven to broil and add aluminum foil to a baking sheet.
  2. Place the filets on the sheet and brush with olive oil. Sprinkle with parmesan cheese. Lightly season with black pepper and salt.
  3. Place the pan in the oven and broil for 6-8 minutes or until the fish turns golden brown and flakes easily with a fork. Take the pan out of the oven and set it aside.
  4. As the fish is cooking, toss the fresh basil and tomatoes with the rest of the olive oil. Add salt and pepper. Set the bowl aside.
  5. Put the cooked fish onto serving plates and top with the tomato-basil mixture.
