How do I reheat leftover fish?

Ingredients
  

  • 2 T. extra virgin olive oil divided

  • 4 6- ounces fresh haddock filets

  • ¾ Cup(s) of freshly grated Parmesan cheese
  • 4 medium diced and seeded tomatoes
  • 2 Cup(s) of thinly sliced fresh basil leaves
  • Optional:
Sea salt and black pepper to taste

Instructions
 

  • Preheat the oven to broil and add aluminum foil to a baking sheet.
  • Place the filets on the sheet and brush with olive oil. Sprinkle with parmesan cheese. Lightly season with black pepper and salt.
  • Place the pan in the oven and broil for 6-8 minutes or until the fish turns golden brown and flakes easily with a fork. Take the pan out of the oven and set it aside.
  • As the fish is cooking, toss the fresh basil and tomatoes with the rest of the olive oil. Add salt and pepper. Set the bowl aside.
  • Put the cooked fish onto serving plates and top with the tomato-basil mixture.
