Easy Parmesan Breakfast Potatoes Recipe

Ingredients

  • 3 large diced baking potatoes

  • 1 Tbsp water

  • 1 Tbsp extra virgin olive oil
  • 
1 diced medium red bell pepper

  • ½ diced medium red onion

  • ½ tsp garlic powder
  • 
½ tsp dried parsley
  • 
½ tsp dried rosemary
  • 
½ tsp smoked paprika

  • Sea salt and black pepper, to taste

  • ¼ cup of freshly grated Parmesan cheese


Instructions

  1. Put the potato and water into a microwave-safe dish and cover. Cook for 3-4 minutes or until potatoes are tender. Don't overcook them and make them mushy.
  2. Heat the oil in a cast iron skillet on medium heat. Add the red pepper and onion and sprinkle on the garlic powder, parsley, smoked paprika, and rosemary. Season with salt and pepper and stir.
  3. Cook, and stir frequently until the pepper and onion are soft. This will take about 3-4 minutes.
  4. Drain the moisture from the potatoes and pat them dry. Put them in the skillet and season with salt and pepper. Cook, stirring occasionally, until the potatoes are golden brown and a little crisp. This will take about 6-7 minutes. Add more salt and pepper if needed.
  5. Take off the heat and add Parmesan cheese on top of them while they are warm. Cover and let the cheese melt. Serve.
