What type of potatoes is best for baking?
Baking potatoes requires a unique and varied selection, depending on the dish. You should use high-starch varieties like Russet or Idaho potatoes for fluffy, baking potatoes.
As they contain more starch, they will produce an even fluffier result than lower-starch potatoes.
Use a lower-starch alternative like Yukon Gold or Yellow Finns if you want crispy skin.
The brown, thick skin of these sauteed potatoes will ensure a crispiness normally found with higher-starch varieties but with the added benefit of being creamier in texture when cooked.
So, consider these types carefully when looking for the perfect potato to serve your next dish!
