Oreo Mint Cookie Bars Recipe
Thanks to the butter and brown sugar in the cookie base, it has the same soft, chewy texture as your favorite bakery cookie bars.
Adding chopped Mint Oreos gives these bars their signature taste. Some pieces stay big and chunky, while others blend into the dough. Every bite brings a new surprise!
Those pretty mint M&Ms aren’t just for looks, too. They add bursts of cool mint flavor throughout the bars. Plus, their green color makes these treats perfect for holidays or parties!
The bars bake thick and golden, with all those yummy mix-ins creating a treat that’s way better than plain old cookies. Your friends won’t believe you made these at home!

Why do cookie bars crack on top?
Those cracks on top mean you’ve done everything right! They happen when the top sets while the inside is baking and rising—like when brownies get that perfect crackly top!
The key is not to worry about those little cracks. They add character and show that your bars have that unique chewy texture inside. Plus, they make perfect spots for all those toppings to nestle into!
Those extra M&Ms and Oreo pieces we sprinkle on top find their way into these natural little spaces, making every bite even more delicious.

Why do my cookie bars come out too gooey?
Gooey cookie bars are usually a result of incorrect baking time and temperature. These thick bars need 40 minutes to set correctly in the middle, even if the top looks done earlier.
Your oven temperature can also make a big difference! I recommend using an oven thermometer because many ovens run hot or cold. If the temperature is off, you might have unevenly cooked bars.
The parchment paper liner is also crucial. It prevents the bottom from getting too dark while the middle sets. If you skip it, you might pull the bars out too early, thinking they’re done when the bottom browns.
