Gooey cookie bars are usually a result of incorrect baking time and temperature. These thick bars need 40 minutes to set correctly in the middle, even if the top looks done earlier.

Your oven temperature can also make a big difference! I recommend using an oven thermometer because many ovens run hot or cold. If the temperature is off, you might have unevenly cooked bars.

The parchment paper liner is also crucial. It prevents the bottom from getting too dark while the middle sets. If you skip it, you might pull the bars out too early, thinking they’re done when the bottom browns.

These Oreo Mint Cookie Bars are full of minty flavor! Any Oreo fan will love how these taste!

Ingredients
  

  • 2 Cup(s) of melted unsalted sweet cream butter
  • 2 ½ Cup(s) of sugar
  • 1 Cup(s) of packed brown sugar
  • 4 eggs
  • 2 egg yolk
  • 4 tsp vanilla extract
  • 5 Cup(s) of flour
  • 4 tsp cornstarch
  • 1 tsp baking powder
  • 2 tsp salt
  • 2 Cup(s) of chocolate chips
  • 2 Cup(s) of Mint M&M’s
  • 24 chopped Mint Oreo cookies

Instructions
 

  • Preheat the oven to 350 degrees.
  • Mix the melted butter, sugar, and brown sugar using a mixer until combined.
  • Mix in the eggs and egg yolk one at a time. Be sure to mix well after adding each egg.
  • Add and stir in the vanilla.
  • Mix the flour, cornstarch, salt, and baking powder in a different bowl.
  • Gradually mix the dry ingredients into the wet ingredients until fully combined.

  • Mix in 1 1/2 cups of the chocolate chips, 1 1/2 cups of the M&M's, and 1/2 of the chopped Oreo cookies.
  • Spread the batter into a baking dish and top with the rest of the candy, chocolate chips, and cookies.

    Put the pan in the oven and bake for 40 minutes or until the edges turn golden brown.
  • Let the dessert bars cool before cutting.
