Ingredients
  

  • ½ Cup(s) of honey
  • ½ Cup(s) of water
  • ¼ Cup(s) of tightly packed fresh mint leaves torn and bruised
  • 2 large pink grapefruit peeled, pith removed
  • 4 sprigs fresh mint
  • Sparkling grape juice or club soda

Instructions
 

  • Make a simply syrup by mixing the water and honey in a saucepan over medium heat. Add the mint leaves and stir.
  • Simmer, stirring frequently, until the honey dissolves.
  • Reduce the heat to medium-low and simmer for 5 minutes. Take the pan off the heat and strain. Get rid of the mint leaves.
  • Add the peeled grapefruit into the blender and blend for 1 minute, until liquified.
  • Fill the glasses 1/3 full with the grapefruit puree, drizzle the honey syrup, and then top with the sparking soda.
