The walnuts add the perfect crunch and pair with the softness of this bread. You don’t often combine two textures like this and create bread perfection.

My boys have always been fans of lemon-flavored bread, so adding the blueberries and nuts was new to them. And they said that it was a game-changer as well!

We love eating this during breakfast, but I have no issues grabbing a slice or two and enjoying it for a snack and dessert!

How do I keep baked bread soft?

Keeping baked bread soft and fresh for several days can be tricky, but it is not impossible.

Start by tightly wrapping the loaf in plastic wrap and pressing it to adhere to the bread’s surface. Then place this wrapped loaf into a tall plastic container or paper bag with the top folded outward.

This will trap moisture within the container and keep your bread from hardening too quickly.

Another helpful tip is individually wrapping slices of chosen loaves in aluminum foil before storing them. This helps retain each slice’s natural moisture and keeps them from drying out too quickly.

Finally, ensure you store your bread at room temperature – never in direct sunlight or near a heating element.

This easy Lemon Blueberry Nut Bread Recipe proves that baking bread doesn't have to be hard!

Ingredients

  • 1/3 cup of melted butter
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 2 large room-temperature eggs
  • 2 cups all-purpose flour, leveled
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 1 cup fresh or frozen blueberries
  • 1/2 cup chopped walnuts nuts
  • 1 tablespoon grated lemon zest

Crumble Ingredients:

  • 1/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tsp ground cinnamon
  • 1/4 cup unsalted butter 

Glaze Ingredients:

  • 2 tablespoons lemon juice
  • 1/4 cup powdered sugar

Instructions

Preheat the oven to 350 degrees.

Beat the sugar, melted butter, lemon juice, and eggs in a bowl.

Mix the baking soda, salt, and flour in a different bowl.

Add the dry ingredients to the bowl of wet ingredients and whisk to combine.

Fold in the blueberries, lemon zest, and walnuts.

Grease the loaf pan and then add the bread batter.

Put the pan in the oven and bake for 70-75 minutes. You can test the doneness by inserting a clean toothpick into the middle and seeing if it's clean.

Let the bread rest for 10 minutes in the loaf pan once it's done baking, then take it out of the pan.

Combine the powdered sugar and lemon juice in a bowl and drizzle over the top.
