I’m what you’d refer to as a “soupie”. I love soup, all year long. It’s not only hearty, but it’s often made with healthy ingredients, too.

For this reason, I love making this bacon and beans soup. It’s literally the definition of comfort food, with each and every spoonful.

Beans and Bacon Soup Recipe

Since you can make this in the slow cooker, it’s one of those soups that permeates the smell all around the house. There’s nothing quite like walking through the front door and smelling the soup getting hot and ready!

My boys love to eat slow cooker soups because it’s always hot and waiting for them to fill up their next bowl.

This is super helpful when we all have different schedules, but all of us want to make sure that we fill our bellies, too!

How do you store leftover soup?

When it comes to storing leftover soup, having the correct container is key. An airtight container will keep the moisture locked in, preventing bacteria from forming and spoiling your soup.

Additionally, a non-reactive container such as glass or plastic will best protect the flavors of your soup.

Be sure to double check that the containers are properly sealed before refrigerating them. For optimal freshness, frozen soups should be used within three months and refrigerated soups should be used within three-four days.

Ingredients
  

  • 8 ounces of chopped Bacon
  • 1 tbsp olive oil
  • 1 Cup(s) diced onions
  • 2 Cup(s) diced Celery
  • 2 Cup(s) diced Baby carrots
  • 64 ounces Chicken stock or broth
  • 2 tsp Worcestershire sauce
  • ½ tsp Garlic powder
  • tsp Thyme
  • ¼ tsp ground Cumin
  • ½ tsp Salt
  • ½ tsp Black pepper
  • 1 lb Dried Great Northern Beans

Instructions
 

  • Cook the bacon on the stovetop until it’s crispy. Set it aside.
  • Add the olive oil, onions, celery, and carrots to the crockpot.
  • Add the cooked bacon, chicken stock, garlic powder, Worcestershire sauce, thyme, cumin, salt, pepper, and beans.
  • Put the lid on the crockpot and cook for 5-6 hours on high until the veggies and beans are soft.
  • Add to soup bowls and garnish with toppings.
