Strawberry Banana Bread Recipe
This Strawberry Banana Bread Recipe is one that you will love. Homemade bread topped with a sweet strawberry frosting will have you wanting one more slice!
Ingredients
- 1 cup of granulated sugar
- 1 large room temperature egg
- ¼ cup of oil
- 1 tsp. banana extract
- ¼ cup of sour cream
- 2 medium very ripe mashed bananas
- ½ tsp. baking soda
- ½ tsp. baking powder
- ⅛ tsp. salt
- 2 cups all-purpose flour
- 4 ounces of softened cream cheese
- ⅔ cup of granulated sugar
- 1 large room temperature egg
- 3 tbsp. flour (divided into 2 tbsp. and 1 tbsp.)
- 1 cup of diced strawberries
Icing
- ½ cup of powdered sugar
- 4 tbsp softened butter
- 1 tsp. strawberry extract
- red food coloring
Instructions
- Preheat the oven to 350 degrees.
- Spray a 9X5-inch loaf pan with nonstick spray. Add parchment paper to the pan as well. Make sure that it covers the bottom of the pan and goes up the sides. Have the paper extend about 4 inches over each side to help you lift the baked bread easily out once done.
- Grab a bowl and mix the sugar, eggs, oil, sour cream, and banana extract. Add the mashed bananas and mix well. Set the bowl aside.
- Mix the baking powder, baking soda, flour, and salt in a different bowl. Combine the dry mixture with the wet mixture bowl and stir.
- In a mixing bowl, use a mixer and combine the sugar and cream cheese. It should be creamy. Then add 2 T of the flour and mix until it is smooth.
- Add the rest of the flour (1 T) to the strawberries and fold them into the cream cheese mixture.
- Pour 1/2 of the batter into the loaf pan. Spread the cream cheese mixture on top of that, and then add the other 1/2 of the batter. Spread out so that it's even.
- Put in the oven and bake for about 50 minutes, or until a toothpick inserted in the center comes out clean.
- Take the loaf pan out of the oven and put it on a cooling rack to cool.
Icing
- Mix the butter, powdered sugar, strawberry extract, and 1-2 red food coloring drops. The mixture should be smooth. Use a #5 decorating tip on a piping bag and pipe across the top of the cooled bread, or just drizzle it on top using a fork.
