I love the tangy bite of a well-placed cranberry at all times of the year. What about you? I love making Sunday brunch recipes like this!
Did you know that coffee cake is named such because you are supposed to eat it with coffee, not because it is made with coffee? You’ll love this simple easy recipe!
Specialty Ingredients:
The following ingredients are affiliate links on Amazon because they may be a bit hard to find in your normal store. I wanted you to be able to see exactly which things we are using.
Granulated Sugar – Don’t be fooled by the fancy name, this is simply regular white sugar.
Brown Sugar – I prefer light, but you can choose your preference.
Reminder, not all ingredients in the Cranberry Pecan Coffee Cake Recipe are linked above, just the ones that may be a bit difficult to find or that you might be unsure of what to look for.
Must Have Resources:
When making this Cranberry Pecan Coffee Cake Recipe at home, you really need to have the following Amazon affiliate tools on hand.
Bundt Pan – You can use a simple bundt pan, or you can mix things up with a more fancy one. The choice is totally yours.
Large Bowl – This set is my favorite set on Amazon, by far! I use at least one of my bowls every single day.
Chopper – Unless you buy your pecans already chopped, you are going to need one of these nifty tools.
Make it a Meal:
Main Dish: The choice is totally your own, but you and I both know that you can never go wrong with fried ham or bacon.
Side: This would be perfect with some pan-fried potato cubes or hash browns.
Refreshing Drink: You are supposed to eat coffee cake with coffee. However, not a coffee fan? Hot chocolate would be good.

The recipe above doesn’t tell you how to make the glaze. I simply used a can of cream cheese icing heated slightly in the microwave. Heating it allowed me to drizzle it. However, if you prefer to make your own glaze, it is really not much more than melted butter and either cream cheese or sour cream with a little confectioners sugar. Well, basically. 🙂

FAQ:
What is the difference between light and dark brown sugar?
Both types of brown sugar are a mixture of sugar and molasses, with dark brown sugar containing more molasses than light brown sugar. Light brown sugar has a delicate flavor while dark brown sugar has a stronger more intense molasses flavor. They can be used interchangeably depending on your personal preference. ~Taste of Home Test Kitchen
