I have a bread machine that has been taking up valuable storage space for quite some time now.
I always want to make bread in it, but never find an easy recipe that sounds good. Until now!

Tips: Prepare extra wild rice when cooking your favorite duck or goose dinner. Store in the refrigerator or freezer until needed.

Yes, you’re reading it right: The 1.5 lb (750 g) recipe contains more yeast than the 2 lb (1 kg).
Variation: Substitute raw, unsalted sunflower seeds or unsalted peanuts for the pine nuts, and dried blueberries or dried sour cherries for the dried cranberries.

Wild Rice and Cranberry Bread Loaf Recipe
This attractive loaf is sure to bring compliments. Its nutty taste is a real plus.
Ingredients
- 1.5 lb Loaf
- 1 1 ⁄4 cup water 300 mL
- 1 ⁄4 cup skim milk powder 50 mL
- 1 1 ⁄4 tsp salt 6 mL
- 2 tbsp liquid honey 25 mL
- 1 tbsp extra virgin olive oil 15 mL
- 3 cup all-purpose flour or bread flour 750 mL
- 3 ⁄4 cup cooked wild rice 175 mL
- 1 ⁄4 cup pine nuts 50 mL
- 3 ⁄4 tsp celery seeds 3 mL
- 1 ⁄8 tsp freshly ground black pepper 0.5 mL
- 1 tsp bread machine or instant yeast 5 mL
- 2 ⁄3 cup dried cranberries 150 mL
- 2 lb Loaf
- 1 1 ⁄2 cups water 375 mL
- 1 ⁄3 cup skim milk powder 75 mL
- 1 1 ⁄2 tsp salt 7 mL
- 2 tbsp liquid honey 25 mL
- 1 tbsp extra virgin olive oil 15 mL
- 3 3 ⁄4 cups all-purpose flour or bread flour 925 mL
- 1 cup cooked wild rice 250 mL
- 1 ⁄3 cup pine nuts 75 mL
- 1 tsp celery seeds 5 mL
- 1 ⁄8 tsp freshly ground black pepper 0.5 mL
- 3 ⁄4 tsp bread machine or instant yeast 3 mL
- 3 ⁄4 cup dried cranberries 175 mL
Instructions
Measure all ingredients except dried cranberries into baking pan in the order recommended by the manufacturer. Insert pan into the oven chamber.
Select Basic Cycle.
Add dried cranberries at the “add ingredient” signal.

I’m anxious to try this recipe. Can I leave out the pine nuts?
Absolutely, you can leave out the pine nuts. The bread will still be delicious without them. Enjoy baking!
Is it really necessary to put in celery seed?
You can skip the celery seed if you prefer, but it does add a unique flavor. Happy baking!

This bread looks wonderful for fall! I have a bread machine, but haven’t used it in several years. I think I need to get it out and make this bread!
I’ve worn out so many bread machines, I’ve lost count, but I’ve never heard of putting rice in bread — sounds interesting!
Great! Now is there a recipe for Portuguese Sweet Bread rolls or Hawaiian Sweet Roll/Bread? I have a recipe that I’ve tried and ( one out of three times) it was good. Don’t know what happened those two times……it turned out plain bread. I want to try a sure thing , my family asks for it. Out of 300 recipes….surely there’s one in there. Thank you. Mary

I saw this and HAD to make it. ..and OMG!!! I LOVE IT!!! I make it in my bread machine on EXPRESS (1 HOUR)!!! And it turns out wonderful every time! I did, however , only put in 1/3 cup cranberries (bought for $1 for a 1/3 cup @Dollar Store) and it was exactly like the sandwich bread that is in the convenience stores with turkey on wild rice and cranberry bread! !! And I can save a ton because I make the sandwich for WAY cheaper! !! And I just threw ALL ngredients in the machine in order listed and turned it on! !!

We used to have a bread maker and baked bread often. I miss that. I think we should start back doing that. Also, I love books from Robert Rose. The recipes are delicious and the pictures are beautiful.
