One of the great things about making casseroles is that you add all the ingredients into the dish and then let the oven take over and do all the hard work.

This is an excellent recipe that anyone can do, even the kids, if they want to surprise mom for Mother’s Day! They’ll love stirring and adding and making – and then presenting to everyone to dig in.

If you want to make this in advance to bake bright and early in the morning, that is also one of the best perks of making casseroles. Easy to prep and pop in the oven for later.

What is the best way to store leftover casserole?

Storing leftover casserole is a breeze when you have the right materials. The perfect choice is an airtight container that maintains temperature and keeps out unwanted moisture or airborne bacteria.

If possible, use a container with a vacuum seal because it helps keep ingredients fresher longer than regular containers.

Be sure to cool off the hot casserole before putting it in the fridge, as leaving it too long in the heat can cause food safety issues.

This Potato Sausage Breakfast Casserole Recipe is one that everyone will enjoy! Loaded with hearty ingredients!

Ingredients

  • ½ pound Italian sausage (without casing)
  •
1 small diced red onion
  •
1 large diced russet or Idaho potato
  •
2 large eggs
  •
3 Tbsp whole milk

  • 2 cups of diced fresh broccoli

  • ¾ cup of shredded sharp cheddar cheese

  • 2 Tbsp of finely chopped fresh chives
  •
Sea salt and black pepper, to taste

Instructions

  1. Preheat the oven to 350 degrees. Add nonstick spray to an 8X8-inch casserole dish.
  2. Add the sausage into a skillet and cook over medium heat until slightly browned. Break the sausage into pieces using a wooden spoon. Cook for 3-4 minutes.
  3. Add the potato and onion and season with salt and pepper. Cook, stirring occasionally, for about 6-7 minutes. The onion should be softer, and the potato golden-brown.
  4. Whisk the milk and eggs in a bowl and season with salt and pepper. Add 1/2 cup of the cheese and stir.
  5. Put the potato and sausage mixture into the casserole dish and stir in the broccoli. Spread evenly and pour the egg mixture on top. Sprinkle the rest of the shredded cheese on top.
  6. Put the casserole dish into the oven and ake for 30-35 minutes. Remove and let the casserole cool for a few minutes before slicing. Top with fresh chives.
