CHOCOLATE CHIP SWEET POTATO BARS

Interesting combination, no doubt… but, these CHOCOLATE CHIP SWEET POTATO BARS are sooooo yummy!  And this from someone who doesn’t like sweet potatoes! 🙂

CHOCOLATE CHIP SWEET POTATO BARS

CHOCOLATE CHIP SWEET POTATO BARS

Cook Time: 30 minutes
Total Time: 45 minutes

Wait until you try these delicious Chocolate Chip Sweet Potato Bars!

Ingredients

  • 2 cups Flour
  • 2 tsp. Baking powder
  • 2 tsp. Ground cinnamon
  • 1 tsp. Baking soda
  • 1 tsp. Salt
  • 4 Eggs beaten
  • 1 15 oz. can Princella or Sugary Sam Mashed Yams or Cut Yams drained and mashed
  • 1 1/2 cups Sugar
  • 1 cup Cooking oil
  • 2/3 cup Mini chocolate chips
  • 1 can Chocolate frosting

Instructions

    Preheat oven to 350°F.


    Sift together flour, baking powder, cinnamon, soda and salt; set aside.


    In another bowl, combine eggs, sweet potatoes, sugar and oil; beat until combined.


    Add dry ingredients; beat until well combined.


    Stir in chocolate chips.


    Spread batter in un-greased 10x15-inch baking pan.


    Bake for 25 to 30 minutes.


    Cool. Frost with chocolate frosting. Cut into bars.
