What is the best way to dice sweet potatoes?

Sweet potatoes are a delicious and nutritious addition to any meal, but dicing them can be challenging. Starting with a sharp knife and a stable surface is important to achieve the perfect dice.

First, cut off the ends of the sweet potato and peel the skin using a vegetable peeler. Then, slice the potato in half lengthwise and lay each half flat on your cutting board. Cut each half lengthwise into thin planks, then stack the planks and slice them into small cubes.

Remember to apply even pressure to your knife while cutting and take your time to ensure consistency in your dicing.

This method will result in beautifully diced sweet potatoes that cook evenly and are perfect for roasting or sautéing in your favorite recipes.

This Sweet Potato Breakfast Hash Recipe is the best way to feed everyone in the morning hours!

Ingredients

  • 2 sweet potatoes, peeled and chunked
  • 1 pound halved purple potatoes
  • 8 ounces Brussels sprouts, halved
  • 
1 red onion, roughly chopped
  • 3-4 cloves minced fresh garlic

  • 1 tsp onion powder
  • 3 T. extra virgin olive oil
  • Sea salt and black pepper, to taste

  • 6 large eggs
  • Kale chips (optional)

Instructions

  1. Preheat the oven to 425 degrees. Add parchment paper to a baking sheet. Slightly spray the paper with non-stick cooking spray.
  2. Toss the potatoes, Brussels sprouts, onion, garlic, olive oil, and onion powder until coated. Add salt and pepper.
  3. Spread the mixture onto the baking sheet in a single layer. Don't overcrowd.
  4. Put the pan in the oven and roast for 8-10 minutes. Stir and then roast for another 8-10 minutes or until potatoes are fork-tender.
  5. Take the pan out of the oven and make 6 round openings on the pan. Pour the egg into each opening, keeping the yolk intact.
  6. Add more salt and pepper and put the pan back into the oven.
  7. Bake for 6-8 minutes until the egg whites are set, and the yolks are done to what you want them to be.
  8. Take the pan out of the oven and add the kale chips or dried herbs.
