Zucchini Ground Beef Rice Skillet

The great part about this skillet recipe is that it’s simple and easy to make. Cook the beef over medium high heat until it’s no longer pink. Make certain that you give yourself about 25 minutes to cook the reduce and also a bit of time for it to thicken after you reduce heat. Cooking times may vary so pay attention so you don’t burn.

My boys love this recipe as do I. I find that when the farmer’s markets are happening in the summer and fall months, I’m buying up zucchini specifically for this recipe. It’s just that good and flavorful!

Can you cut down the fat content in this recipe?

You can. Use ground turkey instead of ground beef or even considering making skillet chicken thighs with fresh zucchini as well.

Zucchini Ground Beef Rice Skillet

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

This is such a simple meal for the entire family to enjoy.

Ingredients

  • 1 lb ground chuck
  • 1 diced red bell pepper
  • 1 diced onion
  • 2-3 zucchini, cut up
  • 1 (15 ounce) can of diced tomatoes
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tsp chili powder
  • 1 cup long grain white rice
  • 2 cups ofwater

Instructions

Saute the beef, bell pepper, and onion in a skillet on medium-high heat until the beef is browned all the way. Drain.

Add in the rest of the ingredients and stir. Cover. Let the mixture come to a boil, reduce the heat and stir as you need to. Cook until the rice is tender, which should take around 20 minutes or so.
