White Chocolate Peppermint Rice Krispies
Making rice crispies into a yummy dessert isn’t hard to do at all! Once you use the microwave-safe bowl for the melted chocolate and then add in your crushed peppermint (or crushed candy canes work, too!), you’ll be almost done with the “hardest” part of the dish!
This recipe is one that everyone in my house loves. It just screams holidays, and it’s such a welcoming and refreshing taste with every single bite. The boys literally grab one every time they walk through the kitchen!
How do you thin out the melted white chocolate chips?
If you feel that they’re too thick once melted, just add in a little bit of coconut oil and stir. I like to use coconut oil because it adds a subtle sweetness to the flavor.

How do you store rice krispy treats?
To keep them as fresh as possible, store them in an airtight container with a lid. They don’t have to be kept in the fridge, but just in a dry place at regular room temperature.

- 6 cups of rice cereal
- 1 (10 ounce) bag of mini marshmallows
- 3 T butter
- 2 cups of white chocolate morsels chips
- ½ cup of crushed peppermints, crushed well
- Red sprinkles (optional)
- Line a 13X9 baking dish with wax paper and then spray that with nonstick spray.
- Add the butter to a pan and melt on the stove over low heat.
- Once melted, add the mini marshmallows and stir the entire time.
- Take off the stove and fold in the cereal, 1 cup of the white chocolate chips, and the crushed peppermint. Stir together well.
- Put the mixture onto the baking sheet and press down with a buttered spatula to reduce sticking.
- Let cool then cut into treats.
- Put the white chocolate chips in a microwave-safe bowl and melt, stirring every 30 seconds.
- Spread over the top of the treats and add sprinkles for decoration.
