Unicorn Bread Loaf Recipe

The mashed bananas make for that delicious banana bread flavoring that we’ve all come to love and enjoy. I also love that it adds some health benefits to our tummies, too! I love to let this cool a bit on a wire rack once it’s done baking and I’m amazed at how the smell has everyone sprinting for the kitchen!

My boys really like this unicorn loaf recipe because not only is it delicious but it’s also super fun to look at as well. Top it with some melted butter or a slight sprinkling or brown sugar to make it a unique slice of bread.

How do you keep homemade bread for drying out?

There tends to be a love/hate relationship with fresh bread from a lot of people. The flavoring is amazing but it doesn’t stay as soft for as long as bread that you buy from the store. (It’s because it’s not full of preservatives like store-bought bread!)

All you need to do is keep it in a sealed bag or container to keep it fresh. Air will dry it out and you can stop that with the right supplies.

How to you know bread is done baking in the oven?

Use the toothpick test! After the bread has been baked for the time on the directions, put a clean toothpick in the middle of the bread and pull it back out. If it comes out clean, the bread is done baking and ready to be taken from the oven. If there is still batter, it needs some more baking time!

Unicorn Bread Loaf Recipe

Yield: 8 slices
Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes

This recipe for Unicorn Bread is simple and easy to make!

Ingredients

  • 1/2 cup of softened unsalted sweet cream butter
  • 1 Cup of sugar
  • 2 eggs
  • 3 ripe bananas
  • 2 Cups of flour
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • Green, Purple, and Pink Green gel food coloring
  • 3 ice cream scoops
  • 1 Cup of unicorn sprinkles (or any sprinkles will work)

Icing Ingredients:

  • 2 Cups of powder sugar
  • 3 T of milk
  • 1/2 Cup of unicorn sprinkles (or any sprinkles will work)

Instructions

Mix the flour, salt, and baking soda in a large bowl with a whisk.

Preheat the oven to 350 degrees and spray your loaf pan (9X9) with nonstick spray.

Beat the sugar and butter together with a mixer.

Beat the eggs into the mixture one at a time.

Mix in the mashed ripe bananas.

Stir in the dry ingredients until mixed well.

Use the batter and divide it between three different bowls.

Put a few drops of the various food colorings into each individual bowl. Stir after adding.

Use the ice cream scooper and put some of the pink batter into the bread pan.

Use a different scooper and do the same with the purple batter.

Put 1/4 cup of sprinkles on top of those two colors in the pan.

Stir in 1/4 cup of sprinkles into the green batter then scoop that onto the other two batters in the loaf pan.

Put in the oven and make for 45-65 minutes until down.

Take it out and let it cool complately. Then remove from the loaf pan and let it cool on a wired rack.

To make the icing, whisk the sugar and milk together in a large bowl.

Pour the mixture over the top of the loaf.

Add on some sprinkles.

The icing will harden as it settles!
